Heart of Sake - 酒の心Always a favorite!! This years Hiyaoroshi was slightly dry and restrained. But aster heating it up, it opened and delivered some wonderful flavor and roundness.

Heart of Sake - 酒の心One of my absolute favorite sake. This particular sake is using a long lost rice variety called Nojouho. This rice was once considered one of the two major rice varieties for sake, along with the king, Yamada Nishiki. It almost completely disappeared in the 1940’s due to its notorious difficulty to grow. It lends a richness similar to Oomachi, but with the texture of Yamada Nishiki. A truly rare find from this incredibly traditional brewery.
Heart of Sake - 酒の心Wow!!! Tamagawa 手つけず (untouched series). Bottled directly from the tap. This sake uses 100% Nihonbare rice and delivers a slightly effervescent sip with brightness and a long delicious umami finish.
Heart of Sake - 酒の心Fresh from the tap. Ishikawa shuzo’s shiboritate nama genshu is a summer treat. It was so good I drank the entire bottle in one sitting!!!
