Wow very bold flavorful, fruity and tangy. Strong alcohol-flavor (for a sake). My wife says 旨味抜群❗️ Umami Batsugun! Sampled chilled.
Now trying it as Atsukan (53°C). The alcohol-flavor has disappeared. The tanginess has also lessened and more of its sweetness comes out.

ChrisbrzYamaboushi Bakurai Karakuchi Junmai Nama Genshu
The initial flavor is a tangy bitterness with a slight sweetness afterwards, kind of like apricot. Pairs nicely with buratta or prosciutto. It is definitely Karakuchi
The label says that The Nihonshu-do I’d +28 but the flavor is not that crazy level dry. Maybe the acidity is high but unfortunately it is not listed.

Well here we are at Sake Bar Marumoto.
Fukukocho Junmai Ginjo Muka-atsu Nakadare mild sweetness with a medium strong tangy bitterness on the back of the tongue. Flavor lingers in your mouth maybe it’s the Koji flavor.

Kamikawa Taisetsu Junmai Ginjo Suisei 100% with oden
It’s an okay combination. The Kamikawa is a little sweet. Probably should have tried it earlier in the evening.

This one does not lose to Karaage or Anago tempura with Ume oroshi.
Really strong flavored, we would consider drinking this on the rocks, like a shochu.
Save this one for the end of the evening as it will overpower other sakes. Definitely a closing pitcher, not a starter.

My wife says she can taste caramel, licorice and that it is not harsh despite being a Nama Genshu.
I wonder if we are drinking the same thing?!
ChrisbrzOh my… this is my kind of Sake.
It has a mild tangy yoghurt flavor great for a final Sake for the evening. This is another Sake that has enough character to drink as a stand-alone drink.

Not much information about this Sake on the label
A very smooth Sake with a very subtle flavor. Refreshing, like water. Extremely easy to drink, maybe too easy. I don’t think this Sake has much character to it. We drank this with sashimi and it was OK but I think this will be overwhelming by a stronger flavored food
Perhaps I’m not sophisticated enough to appreciate the subtle flavors of this Sake.

Smooth,slightly sweet flavor. Comfortable, easy to drink everyday.
Actually opened this bottle a few days ago and sampled it with some sushi and sashimi. At the time I thought it had a mild caramel flavor. Today with 蕪のきんぴら the bitterness of the turnip stems made the caramel flavor more pronounced.! Very interesting.
However カボチャクリムサラダ in contrast mutes the caramel flavor bringing out some bitterness and breadth of flavor.
