After all the other Sake I’m not sure how to evaluate this one.
It’s kind of a dark horse
It has a soft round umami. Not a dynamic Sake, but It will compliment food from the background but also will be nice to drink by itself.
We would love to try it with shortcake, Nama cream, or strawberries. Maybe next time!

A nice, tasty Sake that paired well with food. It has an Umami that lingers.

Dry and bitter but not harsh. This might sound strange but it has a kind of subtle dark chocolate flavor.
Pairs really well with Zangi (Hokkaido style chicken karaage) and garlicky edamame.

Soft, smooth mouthfeel. Really easy to drink, as is. We were “sampling” this a bit too much; let’s try it with food!
Mmmm. It pairs really well with sashimi & sushi (鮭, あわび, 鰤, マグロ, 中トロ).
This Yaegaki ヤヱガキ even pairs nicely with ラ フランス pears but not so well with 柿の種 senbei.

Initially a little fruity flavored but has some sharp bitterness. Subsequent cups are full flavored deliciousness. I can’t stop drinking it.
Holds up well even with a strong flavored sukiyaki.
Definitely a savory Sake, the flavor lasts a while. I could drink this by itself without food.

Touyou Bijin Gentei Junmai Ginjo Kame no O
Much more mellow and softer than the Manazuru. It has a slight Koji fragrance and flavor. Lots of umami and a little tanginess and melon flavor. Matches well with salmon tataki (but sadly, not hotate sashimi)
Pairs pretty good with persimmons.

Yes, quite dry with a deep, maybe oaky flavor.
Perhaps not the best match for sashimi/sushi. Too strong for hotate sashimi.
I think we will save some for tomorrow’s sukiyaki.
とても辛口とは思えないんだけど、旨味とかがあまり少ないかな。こってりした料理に合うと思う。例えばおでんとかもしかしたらクリームタイプのパスタとか合うかもしれない。
ChrisbrzOn the second day this Manazuru has mellowed a bit, allowing some vanilla flavors to appear.

Good fragrance, Sweet and tangy musk melon like flavor. Has a bit of an alcohol burn as it goes down your throat.

Round, mellow flavor. Kind of like white chocolate.
It’s a solid Sake that can be drunk by itself.
It’s an okay match with sashimi but an interesting match with roasted pecans. Also it’s not bad match with persimmon or adzuki manju.

Initial flavor is Sweet quickly followed by sharp tanginess. Subsequent glasses are flavorful with umami
My wife says first impression was sparkly and fresh however having it with sushi and sashimi it become kind of numb. it doesn’t bother food but it does not improve with food.
This Sake is good, but maybe it’s best to drink this by itself with a little bit of salty snacks

Aftertaste is mildly sweet and a bit like caramel.
My wife says it’s mellow sweet and a little fruity like melon.
Sadly this is not a real “red Sake“, that is just a red film covering the bottle.

Tasting this before eating, it is Mostly dry with a mild sweetness like (too) young musk melon.
Tasting it after eating a couple nigiri, the sushi sumeshi brings out more of this Sake’s sweetness.
Oddly, drinking it with Hotate sashimi was not impressive. .
I think this Sake has enough character to drink by itself but it is also a really good partner with food
