(7) FUMIKIKIKU SAKE Brewery, Reconstruction 2024 Bottle, 15-year aged sake
The last one was a bottle of Fukko 2024 created by Kaede Ito, a painter from Takaoka City, Toyama Prefecture, and produced by the Toyama Sake Brewers Association.
It looks like a beautifully aged old sake. The taste is clear and refreshing. I was surprised at the gap.
When I entered the store, the first two customers had just finished and I was able to start tasting slowly. So I gave up my place to someone who came later and went home carrying four four-goupe bottles (two from Hanpukai and two from Haneya) in my backpack.
The snow in the Tateyama mountain range is gradually getting lower 🥶.

(6) Haneya Junmai Ginjyo Nama Genjyo Aizan
Next was Aizan.
I had the September lot at home, but my impression was not so good. The November batch was quite tasty, with a moderate sweetness and umami! I was surprised.
I attended the tasting while picking up the last of the hanpukai and ended up with Prism and Aizan in my backpack😅.

The next one is Tominokou, a rice produced in Toyama Prefecture.
It is a gentle and gentle one. It is better to drink it by itself.

(2) Haneya Moonlight Beauty, Omachi No. 10 yeast brewed Nama-shu
We will taste them in order. Next was Omachi.
I felt this sake was weak, perhaps due to the lingering aftertaste of the sparkling sake. If I had drunk it by itself, I am sure I would have felt its delicacy.
Before entering the restaurant, we had miso ramen for lunch at Tsukushi. Last week in Sapporo, we had to give up Sumire because of the long line.

1) Haneya Junmai Daiginjo Sparkling Nama-shu
I went to the tasting by Mizuhata. Just after opening the bottle with a bottle opener. It's dangerous at home unless it's in a bowl because it overflows with shwash. ⚠️
Good for Christmas🎄. It is gas-filled, so once the bubbles are gone, it's solid sake.

Next week we are going to a tasting at Tateyama Sake Brewery, but I am a little worried 😩.
It has a slightly bitter taste and is dry.
The alcohol does not make you feel sick, and it is easy to drink.
I usually drink sweet wine, but dry wine is also good.
From the first sip, you feel sweetness.
After that, the alcohol is felt as a whiff.
Rolling on the tongue, it is still sweet.
This is also an easy-drinking sake.

This is a limited distribution sake from Tateyama Shuzo. It is sold only at a few stores in the prefecture.

I hear that Tateyama Sake Brewery has not been able to recover their pre-Corona sales. I guess they are trying various things 😔.

I don't know where they are going with this. If they aim to make a sake that is distributed only to special dealers in the future, they should have a special feature, such as specializing in raw sake. At 1,925 yen including tax, I wonder if you can do a good job with the second batch?

I thought I've never seen this label before, but it was a limited edition of Tateyama 😳I used to drink it a lot as I thought it was delicious decades ago😊I guess it's tough now with all kinds of delicious sake 💦but I wish you the best of luck!
