Yoohee-san and Yatagarasu④ We drank a little of Bodhi yeast which Mr. Yoohee asked for! 15% Sake degree -10% Polishing ratio 70%. Not too strong and easy to drink! Yuhaesan was surprised that it wasn't too strong 🤣. It's not too sweet for the sake's alcohol content, which is typical of Bodaihashi sake. The label is different from the Bodai Hashiroshi we had at Shorekji, but I wonder if it's a renewal or a different product 🤔. I think the one I had at Shorekji was sweeter.

Yoohee-san and Yatagarasu (3) PURPLE, a new product in the CORE series The new product was unveiled at the Yatagarasu Fair before it goes on sale. So, only the back label is available. Made with Yoshino's Nanaro, 60% rice polishing ratio, 15% alcohol. Other specs are unknown (maybe it was written in the store?). Sake made with Nara's new sake brewing rice, Nanaro. It is the only one of the three types of sake that has just been pressed. It was said to be dry, but it was indeed dry! It is spicier than the other two, and has a clean and sharp taste. Maybe because it's freshly pressed, it feels much lighter than the other two, even though it's a freshly pressed sake. I wanted to ask Mr. Natsume many questions, but he was explaining to the Yatagarasu drinkers one after another 💦.

Yoshino Gin-no-sato Polishing ratio 60%, Sake degree 0, Yeast No.7 Slightly sweet, bitter, and complex. It tastes a little sweet, bitter and complex, which is the opposite of RED. I think Hirupeko would like BLUE better 🤔. According to Touji Natsume, RED and BLUE are sakes that were stored at low temperature in the brewery. He said the new sake will be available around July.

We went to Asano Sake Shop in Sannomiya, where the Yatagarasu Fair was being held. I was originally going to buy the CORE series but decided to drink it inside 😁. Since we were there, we ordered the CORE series set! The sake lees cream cheese cassoulet that came with the set was really good 😋. I was curious about the RED that Hirupeko-san was drinking! The sake-like label was designed by Toji Natsume himself! Yoshino Yamadanishiki 15%, Sake degree -5, Polishing ratio 60%, Ogawa yeast Finally got to drink it 😆. It's gorgeous, a little refreshing and fruity. I thought it would taste heavier, but it is beautiful and easy to drink. Mr. Toji Natsume, who was visiting the store, told us how hard it is to grow rice in Yoshino! He said it is especially hard to grow Yamada-Nishiki because of its long ear length!

This is the second Kaze no Mori Nanarou. This time, I bought a bottle. I would like to enjoy it carefully. The bottle was opened with a nice "shupon" sound. The aroma is not so strong. There is no Bond aroma. Pouring it into the glass, you can see the fine acidity. However, it is not so "shwashy" in the mouth. Still, the balance between acidity and sweetness is amazing! The flavor is probably apple and melon. It does not seem to be complex. It is a very tasty new face~~! I'm about to drink half of it, now. I always think, "The temperature of the refrigerator at home is too high..." If it were cooler, it would be even better and more delicious. I think it would taste even better if it were cooled down more. New rice for sake brewing "Nanadoro" for Nara sake We welcome it with open arms! We look forward to a long relationship with you in the future!

We are back to our favorite, Kaze no Mori. I opened a colander of Dew leaves wind 807. The gasiness that is typical of Kaze no Mori is irresistible. The fruity taste, which is hard to believe with 80% polished rice, and the complex taste of rice mixed with umami, acidity, and bitterness, are wonderful and very three-dimensional. The alcohol content of 16% enhances this sake's character. The fruity flavor is a result of the colander harvesting process. It is too good.

I got another one. This is the first time I have seen this one. It is a limited edition sake brewed at the Katsuragi Sanroku Brewery using sake rice from Chiba Prefecture. It gives the impression of being a little different from Kaze no Mori. However, it is a refreshing and easy to drink sake with a slight sweetness. I was glad to have it! At the store, we purchased Nanaro 657 and Alfa 1. Mr. Furutaka of Aburanaga Sake Brewery, who was visiting the store, said, "This year's Alpha 1 is amazing! He told us, "This year's Alpha 1 is amazing! This is a must buy! I am very much looking forward to it. Mr. Furutaka is soft-spoken and handsome. It was a pleasure to meet him. Thank you very much!

We are moving from Mikage to Sannomiya. Another to-do today was at SANNOMIYA, Asano Japanese Sake Shop. Jaja jaja! I got an autograph from Mr. Furutaka of Kaze no Mori and Aburacho Sake Brewery ~~~~! We were informed on the store's Instagram that he would be visiting the store. I was so excited and anxious for a few days. I have been anxiously fidgeting for a few days. My wish came true! We talked a lot. I was so happy! I heard that they are planning various events for this year as well! I'm glad I was able to share my love for Kaze no Mori. That's the momentum, isn't it? I received 1569 for the water end, which I have been longing for. If I were Bill Gates' son, I would not hesitate to spend the money, but it is 2,000 yen for 45 ml. I will take it carefully. This is the first aroma I have ever had! It has a sour taste, but I don't think it is sour. I also felt a full-bodied sweetness. So this is the sake that was drunk in the Muromachi period! I am glad I could drink it!

This time, we are aiming for Senkou. I got "Retro" out of the Edo-style trilogy. The label also overflows with a retro feel. The first thing you will notice when you drink it is the unique sourness of the sake's raw yeast yeast ✨. I can't describe it well, but it's not just sweet and sour, but also umami sourness, which is different from modern or classic sakes. It seems to be addictive. The rice polishing ratio is not disclosed, so I asked the liquor store and they said it was around 90%, but the clarity is so clear that you can't feel the low polishing at all. It's amazing, SENKYO!

The first Ganki✨ I was looking forward to. The first bottle of Junmai Unfiltered Nama Sake by Yaoshin Shuzo, who is trying to revive the Ganki brand, was Junmai Unfiltered Nama Sake. I will have that junmai unfiltered nama sake. The slight gasiness and aroma in the mouth is irresistible. Personally, I was impressed by the return aroma ✨. I felt that the aroma had a different expression than when it was in the mouth. This lingering flavor is wonderful.

Mori Masu participating in the Risshun Asa Shibori for the first time According to the official website of the Japan Famous Sake Association, the rice is Miyamanishiki. The sake is cloudy white because of the oirigami, but it is beautifully muddy and the tailings are not noticeable. The aroma of pineapple spreads and gives a refreshing impression. The texture on the tongue is silky, as is typical of orikara-mi. The refreshing pineapple flavor spreads in the mouth and disappears quickly. There was none of the acidity that one would expect from Sengoku, and it was fruity and easy to drink! I would like it better if the fruitiness that spreads in the mouth were stronger!

Very clear and transparent with a clear appearance. You can already feel the rice from the aroma. When you put it in your mouth, the flavor of rice spreads all over your mouth just like the aroma! This is the body feeling...! The taste is firm and mellow. The aftertaste of rice flavor remains on the tongue, but that flavor is not bad either. I think it would be better if it were served warmed up.

The cloudy white color is due to the fact that it is an ogara-mi. The citrusy aroma, reminiscent of mandarin oranges, is refreshing and nice. Silky on the palate. Fresh and juicy with a slightly strong alcohol taste, as is typical of the pure sake, giving the impression of a dry taste. The aftertaste is slightly acidic with a pear-like flavor.
