Saturday morning drinking in Sannomiya (5) Memorandum At the third restaurant, Asano Sake Shop, we compared three kinds of Takachiyos for the first time 😋. I don't remember each one individually, but I'm sure they were all delicious... 😆. Next time I'm going to drink at the first house on a day when I don't drink too much 😅.

It is a Nara sake, Shinomine, brewed with "Kame-no-o", which I don't know of any other brewery using except Senkou! And it's from Nara Prefecture. I was surprised to learn that Kame-no-o is not a rice suitable for sake brewing! I was so surprised! The aroma is mildly muscat-like. The mouthfeel is pleasantly gaseous. In contrast to the moderate sweetness, the light acidity and clear, crisp bitterness are very appealing! The crispness is not harsh and disappears quickly. It has a very refreshing taste and is delicious! It has a pleasant taste with a sense of balance that is different from Kameizumi's! Why is Nara sake so good?

I landed in Kochi Prefecture for the first time as Asano Sake Shop is having a Kochi Prefecture Fair! I've been wanting to try this brand for a while ✨. And it's a limited edition sake brewed with Tosa Urara, Kochi Prefecture's preferred rice for sake brewing! The familiar label also has a nice genteel feel to it. After opening the bottle, the aroma is fruity and pineapple-like. The sweet and sour taste spreads quickly in the mouth. It is also fresh. The balance of sweetness and acidity is superb. The juiciness spreads in the lightness and smoothness of a white wine. What a gorgeous and luxurious taste! The graceful cleanness of the wine as it goes down the throat. This also feels fleeting. The story of gorgeousness and fragility repeats itself with every sip! Be careful not to drink too much of this: ⚠️

Finding and mastering famous sake known only to those in the know is one of the pleasures of sake. This is "Sensai," another brand name of Okutamba, a famous sake brewed by Yamana Shuzo! It is a reissue of the original brand that was made until the end of the Edo period. It is said to be brewed using the wooden vat brewing method of the time of its founding, the "nama-hashime" method, and the local Hyogo Prefecture-produced rice, koji, and water, all carefully brewed using the techniques established by the Tamba Toji! The rice is 100% Aiyama from Hyogo Prefecture! As someone who values stories, I can only be interested in this one! The aroma is fruity with a hint of lactic acidity hidden behind the fruity aroma. When you drink it, you can feel the juiciness of Aizan and the characteristic tangy gasiness. It rounds out as the temperature rises a bit. The acidity and the slight bitterness that lingers at the end make the aftertaste tight and sharp ✨. This is local sake! It's good ✨

I learned about this drink around last fall. It is a summer night sky over the past year. It's my favorite Alfa 1 - my favorite. It has 11% alcohol content, which is lower than the Door to the Next Chapter. The label is printed with the constellation Scorpius shining in midsummer. Yes, I am Scorpius. I'm kind of happy lol. The fragrance smells slightly of cemedine. I find myself seeking this scent. There is no fizziness. It is mild and smooth. It tastes like a sweet white wine. I think I can also feel some lactic acidity. It is delicious! It is 500ml so you can drink it right away. However, I'm starting to miss the shuwa shuwa Kaze no Mori a little~~. I went back and read the past reviews. Next time, after a long time, I would like to choose Roha Kaze 507!

Finally, I was able to drink Sentori Classic! When poured into a glass, it is lightly cloudy and has a gentle aroma ✨. And a gentle aroma ✨. When you put it in your mouth, you can't believe it's called "Classic" because it's so light. The synergy between the lightness of the 13% alcohol content and the refreshing fruity lychee-like flavor. The acidity is not too assertive and the overall balance is excellent ✨This sake is unlike any other sake I have ever had made using the traditional sake brewing method. Delicious! I can drink this as much as I want.

I bought a bottle of Koshi, which I had been curious about but had never had a chance to drink! It was a hot day and I was also attracted to the name "Summer Nama" ✨. The aroma is very fruity and ginjo ✨. Muscat-like aroma and taste spreading in the mouth along with a bouncy gassy sensation. Refreshing and suitable for a summer sake! The lingering taste is also refreshing and cool, accented by a slight bitterness ✨. From the aroma before drinking to the lingering aftertaste, it is consistently clear and transparent ✨. If I were to use an analogy, it's like the pleasant sound and aftertaste of wind chimes✨. I must try not to drink too much.

I am impressed by many things! I don't even know where to begin... Yes - it is outrageously delicious! This is my favorite flavor~! I had it at a tavern a year ago and could not understand the difference between active nigori and regular special junmai. I was nodding my head and thinking to myself, "white malted rice, lees, active nigori, I see what you mean. On the label, there is a warning to be careful when opening the bottle. I opened and closed the bottle several times for the first time. "Oh, it's coming up! It was a very enjoyable experience that lasted about five minutes. There was a QR code on the label explaining how to open the bottle. How polite of them! We chilled it well and drank it. Yummmm~~! The shuwashu is too much. It has a sweet and sour taste, but it is overwhelmingly shwashy in the mouth. Refreshing and light! It's the best! Is it a squall-like flavor of love~! In no time at all, it's my second cup. I'll end here for today! *Even after 2 days, it was outstanding!

I enjoyed Hanaboe's mizu-hashi the other day, so I decided to repeat Hanaboe's recipe, this time with yamahai! This is my favorite Alpha 1. It has been in the fridge for a very long time.... It is quite a miscalculation. Finally, I'm going to eat it! Delicious! The fizziness was not so great. Kaze no Mori raises the bar even before you drink it...(sweat) The first time I drank it, the shock was too much. I can't help but compare it to that. However, it is still delicious! We bought it at Asano Sake Shop. The brewer came to talk to us and we chose mizu-hashiroshi! The brewery's approach of "making sake that opens up the acidity" really hit home with me, as I'm a sucker for acidity✨. When I opened the bottle, the aroma alone was enough to kill me! When I drank it, I found that it has an elegant acidity just like yogurt, but it's not sour, but it's so good with flavor and depth! I would drink it forever. This is the aesthetics of sourness ✨. Great sake. Thank you very much.

The other day, I was missing the acidity of the sake made from the sake called "Edogari Retro" by Senkou, and when I went to buy their Edogari Modern, they were out of it. I went looking for a sake with a traditional sake yeast yeast yeast, and came across Dai-Shichi's "Namahashiroshi". When I tasted it, I found its acidity and umami irresistible! I bought it without hesitation. When I opened the bottle, it was not nearly as fruity, but had a good balance of umami, acidity, and richness✨. And as the temperature rose, the acidity became more and more clearly defined, making it more and more to my liking! I look forward to seeing how it changes over time! The brewery's website clearly shows their passion for sake brewing and their commitment to the raw yeast production, and I felt that even the story was top-notch ✨. I will continue to support this brewery! Very good sake! I highly recommend it!

Yoohee-san and Yatagarasu⑤. I wanted to drink something different, so I chose this one! Aged sake in cask with raw sake is not so good 😁. 16% Sake degree +6, Polishing ratio 60%, Association 701 yeast Yoshino cedar? The wood aroma is amazing! It smells like wood from a home improvement store 😅. No sense of maturity. Maybe the wood aroma drowns it out? This was 1280 yen for 90ml, so I would have been better off drinking a regular CLASSIC set 💦. I've had Yatagarasu in the past, and some of them were off-flavored and subtle, but this time they were all delicious 😋. After this, Yoohee and I stopped by a liquor store in Rokko-michi and went home.
