Nf bapakI went to the last Banshu Issen of the store's September Hyogo Fair. Since I did not have a chance to visit last month, this was my first visit to Asano Nihonshu Store in two months.
Junmai Cho-Kara, fruity and dry. Nice and refreshing!
Junmai Kitanishiki: mainly acidity. I was surprised that the super-hot one was more fruity.
Unfiltered Junmai Daiginjo-Kitanishiki Acidity, clean. Not so sweet.
I was also interested in the limited set of Aizan, but I don't want to miss unexpected encounters if I order a set with many of my favorite types.
In that sense, the super spicy one this time was a good harvest. Thanks for the food. にと2024
First time in Higashi-Umeda, at Asano Sake Shop
My favorite Gobashi was there!
I tried all four kinds of sake!
The interior is clean and new, all seats are standing, snacks are simple and reasonably priced (Umeda price), and there are separate toilets for men and women (important).
The atmosphere was very comfortable for girls with three female waitresses. きなこThe last one was Okura's Yamahai.
It was very easy to drink and had a greener feel than the one from Yukihikoyama. This is also Aizan, but it is totally different from Kaze no Mori.
It went well with the tofu with unrefined soybean curd. It was my first time to try it, but it goes too well with sake. きなこAsano Sake Shop, which has not been here for a long time.
Aizan. Fruity, gorgeous, and refreshing. Too delicious! I didn't know that 80% polished rice could be like this. Amazing!

Moderate sweetness. Dry and bitter. I think it tastes stronger than usual Kaze no Mori. I prefer Omachi or Akitsuho 🤔.
I think it would be better to raise the temperature to taste the sweetness.
I feel the acidity is also emphasized when the temperature is raised.
Maybe it's sweeter at room temperature?

I heard somewhere before that Kaze no Mori's Yamadanishiki is dry and not sweet, so I was wondering if Kaze no Mori's use of Yamadanishiki would result in a dry sake quality? I was wondering 🤔

Grape and banana-like sweetness. I think it is one of the most robust types of sweetness in Kaze no Mori. I wonder what the middle harvest of this would be like?

There are so many different types of wind forests and similar labels that it's hard to notice 💦. boukenI had always passed on it because of the cartoony label, but Matsuchiyo's post got me curious and I bought it 😁.
I thought it would be refreshing since it's a summer sake, but it has a rich sweetness.
I didn't think it was watered down, but it was so heavy.
The second half is a little bit peculiar and you can feel Okura's character even though it's a summer sake. ポンちゃんHello bouken 🐦.

It's so sweet, it's like juice.
The entrée is delicious and the drink goes well with it. ☺️ Nf bapakAs I mentioned for Kameizumi, one of the set ran out, so it became Kisoji.
I have some in the fridge that I haven't opened yet, but this is the second time I've tried Yukawa Sake Brewery, following Kinmon-Nishiki, and this one tastes better.
I also bought a bottle of Okunoto Shirakiku in Wajima, which was brewed by Yukawa Shuzo with rice from Shirafuji Sake Brewery and supervision by the brewery, so I am looking forward to this one. Nf bapakWe received the standard set. The junmai ginjo unfiltered raw sake was gone, so a different one was included in the middle of the set.
The first one was Junmai Daiginjo-Hyogo-Yamada-Nishiki, which had a basic taste, as expected of Yamada-Nishiki, and as expected of jun-dai, with a good flavor and a sense of alcohol, no complaints. But the raw smell of the set was not suitable for the entrée.
Next, Kisoji Natsu Junmai Ginjo Namaishu (pure rice ginjo sake), with a refreshing acidity and sweetness, this was delicious. I wonder if they are combining similar types of sake?
Junmai Ginjo Nama Nama Sake Takaike 63, slightly dry, fruity and clean. It is not as good as Jun Dai, but it is also delicious.
In general, Kameizumi's level is high. I hope Takashimaya will carry more than just Junmai Ginjo CEL-24 as a standard item.

It spurts up quite a bit but opened without difficulty. Strong gasiness and 🍍full sweet and tasty.
Sweet and fruity aroma almost from start to finish.
The impact of the flavor is more intense than the usual CEL-24.
The bitterness has been bothering Huayouyasui for a few years now, but this one tastes like the Huayouyasui of the days when bitterness was not a problem.
The third one is the sake-steamed scallion and kujo leeks from Masuya Seika, which I learned about from the wasabi soramame given to me by Pon-chan.
Aladdin told me they were opening a store at Luxe Aire for a limited time, so I bought it along with a can of Isogou 😊.
The freeze-dried asari tasted sweeter than regular asari 😋.

Inspired by Nara Brewery's UNDERWATER (a beer made with Kaze no Mori brewing water, No. 7 yeast, etc.).
(By the way, Nara Brewery even used soyashi-water this year!)
Steaming is a process that alphasizes the starch in the sake rice to enhance the action of koji enzymes and make the rice easier to dissolve.
The brewery succeeded in brewing sake with brown rice without polishing it at all, based on the unexpected idea that roasting rice could be used like beer without steaming!
This roasted brown rice brewing method is called the Amorphous method.
In the fourth year, a small amount of white malted rice was added in order to reduce the graininess of the sake and to give it more body.
Amber in color, it has the appearance of a lager beer without foam or a lightly aged whiskey.
It also has a top-tasting aroma like sour pickles or beer after the foam has been released.
It is an aroma I have never felt in sake, at least not before.
The first touch is sake sweetness and a light gasiness.
From there, the acidity and clean umami typical of Bodai-Hashimoto sake spread out with a unique burnt and smoky taste, and then it finishes in a flowing manner.
The after-flavor is exactly like the lingering bitterness of beer.
It's as close to beer as you can get, but it's definitely sake 🍺🍶.

Nf bapakI went to the Ayu Masamune Fair starting today. I ordered a very limited set of sake to compare.
Junmai Daiginjyo Nama Sake "Ayu" is indeed a junmai daiginjo, and I can only describe it as delicious. It has a mellow mouthfeel, mild flavor, and a bit of acidity.
The next sake, unfiltered junmai nama sake "AYUMASAMUNE" is as delicious as the jun Dai. It is mellow, acidic and full-bodied, with the difference being the junmai's lack of over-polishing.
Then there was the junmai nigori sake "Sakororo," an alcoholic amazake with a refreshingly sour taste. Of course it was delicious.
Finally, I ordered a separate Junmai Ginjo "Hatsuayu" that I wanted to try from the standard set. It was both sweet and sour, and had a refreshing taste like a junmai ginjo.
After that, we visited Hankyu Umeda, Hanshin Umeda, Daimaru Umeda, Yamanaka Sake no Eki Marche, and also visited Edion Sake Store and Sake no Yamamoto!
Whity's Niigata Okome had a lineup of Sake-no-jin limited edition junmai and junmai spring-fermented sake. I would have brought him home if I had less stock at home.... RecommendedContentsSectionView.title
