Rating [A+]. It is still stable. The flavor is all designed from the aroma and in the mouth. I can feel the flow. It's been a while since I opened it, so it has a freshness to it, but it's still a raw product so I'm looking forward to seeing how it develops. The sharpness and the acidity are very effective, and you can feel the will not to get tired of drinking.

Rating [B+]. Old-fashioned solid body. Squishy with a hint of amino acids. It will bloom if it is warmed up or over 2 weeks after opening.

Rating [A+]. The first sake I drank this year was Yukino Bijin. It is a straightforward sake with the taste of Akita Sake-Komachi. The taste of the rice, the umami, the fullness, the crispness, all of it.

評価【A-】ガツーンと鼻の奥に来る酸とフレッシュさが相まって、「っカァーー！」と言える冷し酒。まるで常温で飲んだときみたいに香りが良いのがスゴイ。

評価【S】こちらもブレない。揺るぎないこのバランス。杜氏の目指す味の方向性が完璧に遂行されてる。磨きによって酸の出し方が変わってくる。雄町三十五と比べドッシリしたフルボディ感、重めの酸があるけど、ものすごく軽いタッチも残してある不思議さ。これがスゴイ。これぞ純米酒の面白さ。ただの純米だと侮ったらひっくり返る。造りの精緻さは十四代みたい。
