The second bottle today is Shinshu Kamerei Junmai Hitogochochi, which was opened last night. This one was stocked to compare with "Summer Jungin" which was released around July every year, but is it not released this year? I couldn't wait to open the bottle last night. I love Kojo-nishiki, one of my favorite rice wine, so I always buy junmai-daiginjo and junmai-ginjo! I have had many tasake, but this is one of my personal favorites! It is as good as ever, and if I had a bottle, I would buy it without hesitation!

Opened a bottle of Kameizumi's limited edition sake that had been in stock. Kameizumi Junmai Daiginjo Genshu CEL-24 Aizan This one is boxed and priced at 4,400 yen (tax included), so it was quite a splurge, but I opened it as a reward for myself! It was a bottle that allowed me to enjoy the pineapple flavor that is typical of Kameizumi, while at the same time taking the time to enjoy its balance and umami! Rice polishing ratio: 40 Alcohol content: 14%.

We also received a bottle of Aizan from Ippaku Suisei, a favorite of Aizan lovers! ICHIHAKUSUISEI Aizan Junmai Ginjo Brewed from high-quality Aizan grapes grown in the special A district of Hyogo Prefecture, this bottle had a delicious balance of sweetness, flavor, and acidity!

Another series by Kitanishi Shuzo, famous for Sairai AGEO Junmai SNOW 2024 I was curious about this at the sake shop I always go to, but upon closer inspection, I found it to be a nigori? As a lover of nigori, I had to try it! When I tried to immediately fight a sea battle, the perforated crown heightened my anticipation! However, there was not much shwash, perhaps because it was shipped in June, but the rich sweet flavor was superb!

Attending a recent event featuring Mr. Sato of Shinsei Purchase & tasting of BEAST TYPE2 Shinsei No.6 THE NUMBER OF BEAST TYPE2 This is a limited edition sake that was sold at this event two years ago, limited to 666 bottles nationwide. It was available for purchase by lottery on the day of the event, and was also served on the spot! The taste of this bottle was one in which you could enjoy the core flavor of the second fermentation in the bottle while it was still shrieking! Rice polishing ratio: 60% (sake brewing rice) Alcohol content: 11%.

The second bottle opened last week was Shinsei Sando (Earth) 2022 This one is a favorite of ours, using Rikuu 132 as the sake rice! We like the clean taste of Viridian made with Misato Nishiki, but we also enjoyed the complex aroma and flavor of Earth!

Update has been delayed due to heavy workload, so this is a summary update. The first bottle is Kawanakajima Genmai Junmai Ginjo Aizan Unfiltered Nama-shu! This is a bottle I drank last year and enjoyed it so much! This year, I bought a bottle without hesitation! It had the mellow sweetness and umami that is typical of Kawanakajima Genmai! I finished it in 5 days, and it was a reward for my exhausted self.., Rice polishing ratio: 55 Alcohol content: 16%.

Four simultaneous releases of the annual Discovery series We purchase a full set of 4 bottles every year, but this year we purchased 2 bottles of our annual favorites due to refrigerator conflicts New Sensation Koshihikari 90 Light nigori unfiltered unpasteurized sake I have had several sake made from Koshihikari rice, but the Discovery series Koshihikari is my favorite! Among the four bottles released at the same time, this Koshihikari is the first to be sold out, so it was an instant purchase! That bottle was as sweet and delicious as ever! This year, it was not so much a bit bitter as it was a complete nigori, or a bit of a orizumi! I enjoyed the rich rice flavor!

I haven't had a drink in a while, so I went to my favorite liquor store and got a bottle of San-do. This store has a fairly high percentage of it, so it's nice to be able to buy it on a steady basis. San-do Brewer's Two Brews It's been a while since I opened the bottle. No opening sound? The taste was as light, sweet and acidic as ever! Although there was no sound when the bottle was opened, there was enough fizz to enjoy a slight tingle! It is a stable taste!

For the third bottle of Noto's reconstruction support sake, we opened a bottle of Matsuura Shuzo's Lion's Village. Eleven sake breweries in Ishikawa Prefecture were completely or partially destroyed by the earthquake this year! We opened this bottle to pray for the earliest possible recovery! Lion's Village It was a bottle of Junmai Ginjo specs, clean, dry and very drinkable! Rice polishing ratio: 60 Alcohol content: 16%.

Taniizumi and Fukuda Sake Brewery collaborated on brewing sake, even though both the brewery and store were completely destroyed by the earthquake. Fukuda's fruity sake quality was more to my liking! Rice polishing ratio: 65 Alcohol content: 14%.

Recreated sake brewed by Fukuda Shuzo based on a recipe from Taniizumi, whose warehouse and store were completely destroyed by the earthquake. I have never had the original TANIZUMI sake, but it was a clear, dry, and easy to drink bottle! Rice polishing ratio: 58 Alcohol content: 15%.

It's been a while since I got this bottle at my favorite liquor store, so I opened it right away. Kawanakajima Genmai Junmai Ginjyo Miyamanishiki I loved this bottle because it had a very clean sake quality, but was also very drinkable! Rice polishing ratio: 49 Alcohol content: 16%.

If you like Collage & Sake Mirai, you can't miss this one! Collage Sake Mirai Junmai Ginjo The best way to enjoy the wine is to buy it from the shop. The Sake Mirai is also very popular, and it's very easy to drink. Polishing ratio: 50 Alcohol content: 16%.
