All of the new Modern is now made from freshly pressed sake. It is bottled as it is freshly pressed. San-Shiki refers to sparkling sake.

I've never had so much trouble opening a bottle...
The bubbles are fine and bubbly like champagne, and the juice is like lemonade 😳.
The alcohol is an astonishingly low 5%, so low that it is soft and doesn't even need water.
The aftertaste reminded me a bit of sake, and I felt like I was witnessing the potential of sake 👏.
