The taste is quite voluminous because the rice is polished to 80%. It has a rich roundness like a pineapple.
Thanks to the beautiful acidity and fizziness typical of Kaze no Mori, you don't feel the sweetness or the high alcohol content at all. This is delicious.

This is my favorite Kaze no Mori. 80% milled rice with this taste.
Natural and fresh! When you pour it into a glass, you can see a slight bubble. It has a melon-like aroma that is unique to raw sake. The taste of the rice is unique to low rice polishing. It is truly "rice juice".
The balance of volume and acidity is also perfect.
It was perfect with cream cheese and smoked salmon.
Freshly pressed Junmai Ginjo.
It is bottled without any filtration process and released as raw sake.

Cold chrysanthemum Koshihikari 90 Rice of Chiba series.
The label was so flashy I had to buy it!
