The 2022 model was a gift, and although it sounds great when you talk about aging, I was hesitant to open it because it was too good to be true! The aroma is slightly reminiscent of wood barrels, the mouthfeel is light to medium, and the slight effervescence gives it a sense of freshness. Hometown spoils of war I imagined it to be sweet, but it is light, probably because of the acidity. It is quite light. The taste is changing. The heat from the intense summer heat is taking its toll. It's been left at room temperature for too long... I'll buy some again when I go to Kyoto to apologize.

There was no nama-shu available, so I got hi-ire. I think this is the first time I've ever tasted a hi-ire sake that still has a slight effervescence to it. It is less sweet and more subdued than the nama-zake version, making it a light and refreshing sake. Perfect as a food sake. Delicious. But I preferred the nama sake... **Sweet and light.

Accustomed to the ginjo aroma, I am momentarily intimidated by the junmai-like aroma. When you take a sip, you will notice the soft sweetness of the rice. The first beautiful wine design in years. Was it this good? (lol) It has a clean but strong umami, and the aftertaste cuts through well. It doesn't have the freshness of nama-shu, but it has been transformed into umami. I wonder if this is what "beauty" means. I am looking forward to seeing the changes in the second and third days after opening the bottle. ☆☆☆☆☆

The aroma was not my favorite, but as I drank more, I was hooked. The texture is thick, slightly effervescent, and the sweetness is gentle, just like Tenka.
