At first, it was hiya. The rice flavor spreads from the sticky mouthfeel to the sweetness and bitterness of the rice, which leaves a lingering aftertaste. It is not soft and clear, but rather a strong and delicious umami. I tried it with natto (fermented soybeans), but it had a mild sweetness that was different from drinking it as it is. When I warmed it up, the smell was soy sauce, but the sweetness of the rice came through. If you want to enjoy it only with sake, it is definitely better with hot sake. However, when paired with salty food, the sweetness is not so noticeable when heated. As a person who gets bored easily, I think this unfiltered, unpasteurized Shinkame is not bad, and can be enjoyed both cold and hot, but its high price makes me hesitate to evaluate it.

The umami and sweetness of the rice come at once, and since it is a pure sake, the bitterness of the alcohol also comes, but the balance between the umami and sweetness is good, and the umami-sweetness settles down quickly. It has a strong flavor, but it goes down smoothly, so it goes well with rice. It is best served a little lukewarm for a mid-meal drink, as the lukewarm sweetness and the sharpness of the aftertaste can be felt smoothly. I would like to drink it cold when it is served by itself without a meal.

It has a sweet rice taste with a hint of sourness, umami, and a junmai-like acidity and miscellaneous flavors that slip right off the palate. The balance is very good, and the sweetness without a strong alcoholic taste makes it easy to drink. It is very tasty. I thought it might not go well with rice because of its sweetness, but the miscellaneous flavors in the aftertaste make it a refreshing finish, so it goes surprisingly well with strong-flavored food.

As sung with the full-bodied, creamy aftertaste derived from Kimoto, it does not have the gusto of sake, but it has a definite slightly sweet richness of rice and a schwirling carbonation. It has a similar taste to Shinmasa, but it does not have the acidity of Shinmasa and is mainly slightly sweet, so it goes well with everything, even with rice. It was quite tasty.

I was wary of the acidity because I thought it was a sake yeast yeast, but the acidity is not unpleasant at all. It goes against the fruity trend these days, but I quite liked this one, which is full of umami for me. The price is a little high at 2,000 yen, but I think it is worth it.

Slightly refreshing, with a fairly strong acidity. I don't like sake with strong acidity, but this one is easy to drink with its unctuous acidity. It has almost no flavor, and it slurps like water. Personally, it is not my favorite kind of sake, but it is one of the lighter types. It is quite tasty, which explains why it is the most popular sake.

It wasn't this kind of sake, but it was the sake that got me hooked on sake. Fruity and sweet, followed by a clean taste. If I drink it now, I might think it lacks the taste of rice or something, but I'll keep it as a memento. I want to drink it again because I am looking forward to seeing what I would think of it if I drank it now.

Smells like amazake, tastes like amazake in the first sip, and has a dry and refreshing aftertaste, quite well balanced. I never thought I'd hit the jackpot when I bought it at Lawson in Takayama City. I remember being impressed that even convenience stores have good sake!
