At first, it was hiya. The rice flavor spreads from the sticky mouthfeel to the sweetness and bitterness of the rice, which leaves a lingering aftertaste. It is not soft and clear, but rather a strong and delicious umami. I tried it with natto (fermented soybeans), but it had a mild sweetness that was different from drinking it as it is. When I warmed it up, the smell was soy sauce, but the sweetness of the rice came through. If you want to enjoy it only with sake, it is definitely better with hot sake. However, when paired with salty food, the sweetness is not so noticeable when heated. As a person who gets bored easily, I think this unfiltered, unpasteurized Shinkame is not bad, and can be enjoyed both cold and hot, but its high price makes me hesitate to evaluate it.
