The premium series of Senkyoku is said to consist of three products: "Kamosu", "Ura", and "Issei". The brewing process uses Domaine Sakura Kame-no-o, which is limited to the rice paddies on the same water vein, and a rice polishing ratio of 40%. The rare product is made by taking the time to collect every drop of sake that drips down from the "Fukuro Shibori" method, in which the finished mash is placed in a sake bag and hung up. The taste is simple. The aroma is clean, yet gorgeous and beautiful, with green apple and white grape flavors. It is a shame to drink it, but that's okay, it's my birthday. I feel like I'm spoiling myself every time, using overwork as an excuse, but I'm sure it's just my imagination. I never complain (although I do), never stop smiling (or am I mad? I'll try to do my best so that I can do a better job every day!

It is the first sake of the year, and I respectfully enjoy the first sake of the year so as not to trigger the "mottainai" (what a waste) disease. New Year's is a time to pamper oneself, to be in the mood to drink special sake with a little bit of sparing. It's also my birthday. The sake was discovered by a farmer in the Kikuchi River basin, the brewery restored a small amount of seed rice, and the sake was grown without fertilizers or pesticides in the Kikuchi River basin and brewed using the "kamishibashi" method. The sound of the bottle being opened and the shock of the opening surprised me again. It may have been opened a little bit wrong, but the shock is scary. It has a pleasant gasiness, acidity, a hint of sweetness, and a deep aroma. I would have preferred something delicate and light as a snack. It was New Year's, and I had kamaboko (fish cake) and frozen triwasa, which I had saved. Yes, there are times when there are no snacks, so I'll prepare a fleur de sel. If I have salt, I can usually get by. The bubbles rising from the glass are beautiful. The Holmgard champagne glass was the right choice. Let's give thanks for the day, and enjoy it respectfully.

It is collected at the final stage of the process. At the end of the pressing process, the last drop is squeezed out under strong pressure from the part that cannot be squeezed out under normal pressure. Senkyo makes a good finish from what tends to contain a lot of miscellaneous tastes such as bitterness and astringency. This is a profound Domaine method. Ah, delicious!

On the holy night, Kumamoto Castle reconstruction commemorative sake. 2016 earthquake intensity 7 was observed and Kumamoto Castle suffered damage totaling 63.4 billion yen. Although the castle tower was restored in 2021, the completion schedule is 2052 for all sections to be in the same condition as before the earthquake. Since the brewery brews "Morikuma-san" rice produced in Kumamoto Prefecture, part of the proceeds are donated as a donation project. It has a soft mouthfeel and aroma. The rice is polished to 80% using Nara Prefecture's only sake rice, Rohafu, and is made with ultra-hard water from deep underground water. Late at night, I enjoy a nabe (one-pot dish) of boiled oysters, tofu, and leeks. Yes, it's Friday, and I'm feeling tired, dirty, and down and out again this week, but this is the healing water that gives a glorious light to my heart.
