I was delighted to get this one from the three products, "Sentori Ippou", "Rei", and "Sake". I quickly prepared a glass of wine and carefully drank it.
It is unfiltered, unfiltered, bottle-enclosed, and fire-aged. The rice is Domaine Sakura Yamadanishiki, with a milling ratio of 40% for koji rice and 40% for kake rice. It has a gorgeous sweetness, smoothness, minerality, and pleasant acidity.
The white peach-like sweetness and bitterness give it a complex depth. Excellent. I decided to pair it with chilled Chinese noodles, but I am not sure if it would be a good match for such a special sake. Let the exciting daytime drinking begin!
