It's a weekday, but let's open the bottle, so here it is today. Aizan 807" is a seasonal release. It is brewed with 80% polished rice from Aizan, which is grown in a special A district in Kato-shi, Hyogo Prefecture.
The Kaze no Mori series has done away with the "Junmai" or "Junmai Ginjo" specific name sake, and all the sake are labeled as "Junmai Nara-shu.
The "80" means 80% polished rice and "7" means No. 7 yeast, but it is difficult to remember how this works.
First, a sip. As expected, there is a sense of gas, umami, and muscat-like sweetness. Is this due to the hardness of the water? Is there a mineral taste?
The side dish is sea bream. It is served with pickled cherry blossoms. It goes well with the bitter taste of spring. Before the consecutive holidays, we received Rikisui!
