Kangiku's Discovery Series is "making sake that 'fills the heart' of the drinker. The main theme of the series is Chiba Prefecture, and it is simultaneously released in four product lines: Identity (proof of existence), Adapt (adaptation), New Sensation (new sensation), and Blue Sapphire (sincerity). This time, we were lucky enough to obtain four of them. The first bottle is a 50% polished "So-no-Mai" rice produced in Chiba Prefecture. Fresh nigori sake with a strong gaseous taste is my recent boom. While I was experimenting with various sake, I was curious about this one from a sake brewery that claims Shirohato as its guardian deity. I had previously tried the Shiroi Hato Junmai Ginjo Usukudari Nama. The green apple flavor left a good impression, and this time the label was more mature. The image of fireworks is perfect for a summer night. The bottle is of the secondary fermentation type, and the sweet and sour aroma like rummels wafts through the air when the bottle is opened. The supernatant is light, but the mouthfeel is tight with a hint of acidity. It is made from "Hanabukiyuki," Aomori Prefecture's preferred rice for sake brewing. Rice polishing 60%, alcohol 15%. And it's good value for money. It is a sake that makes you want to enjoy summer evenings slowly!

This small 500ml nigori sake is light and easy to drink with an alcohol content of 9%. The gas is slowly and carefully drained according to the label warning against spewing. The mash is pressed in the early stages of fermentation, which is a novel process, and the toji repeatedly tastes the mash while it still has a good amount of sugar content to determine the timing of the sugar content. The finished product is shipped after determining the balance between carbon dioxide gas and flavor. I think this was the first time in the past that it took me a long time to get rid of the gas. It was chilled to a crisp, but now it's a little lukewarm 😂. As expected, the taste is gassy, creamy, and rummy sweetness. The rice is 55% Miyamanishiki, and you can taste the flavor and gorgeousness of the rice. It was a refreshing sake perfect for summer. ☺️

I took off work to welcome you here. I pretended I didn't see the piles of work and concentrated on opening the bottle. The sound of a sponking sound, pouring into a large Champagne glass, and the fine bubbles that soared up in the air were beautiful. The gasiness, softness, umami, and lactic acidity on the palate are all wonderful 👏. Hozu is a representative variety of Higo rice, which was called the best rice in the world during the Edo period (1603-1868). This product was revived in the modern age, grown without fertilizers and pesticides, and brewed using the "nama-hashiroshi" method. The four icons on the back label shine brightly. We were told that this is the last shipment for this season, and we are happy to welcome it~!

It tastes sweet and sour with carbon dioxide gas from fermentation. But it has a dry and refreshing aftertaste. This is a dangerous one that can be drunk with ease. Sake rice produced in Aomori Prefecture is used and bottled together with nigori. The secondary fermentation in the bottle gives the sake a rich gaseous taste. Refreshing in summer is exactly what this sake is!

The time has finally come to open the bottle of this sake. I've been so busy with work that I haven't been able to get it ready to welcome you. I wonder what kind of timing you guys use to open your special sake 🤔. The brewery's flagship "Homasu" rice is used, and the production is limited to 5,000 bottles nationwide. The policy of the Sansho brand is to trust and watch over the bacteria and microorganisms without excessive human control. Gonou brewing adds "no fertilizer," "no pesticides," and "wooden vat brewing" to the "no fertilizer" and "no pesticides. So far, I have received some. The Rokuho brewery adds "no additive yeast" to the above. On the back label, six dazzling engravings shine brilliantly. It is a shame to drink it. No, no, the owner had just told me that I should drink the sake as soon as possible. It was a coincidence that it was lucky enough to come to our house, but we had left it too long. Now let's drink it! It is brewed in the same traditional wooden vat as in the Edo period, and you can smell the aroma of cedar wood. It is said to go well with the Edo Period's native Hozu, and has a complex harmony of depth. I sipped it slowly and carefully instead of drinking it quickly as I usually do. The rugged red tag warning against opening the bottle is kind of cute. Of course, we will open the bottle with caution this time as well. ‼️ We welcomed a limited item from the HIZIRIZM series from a Gunma sake brewery. We took out our holmgard champagne glasses and poured a generous amount. It is a light sake with a whopping 5% alcohol content. It is not cosy, but its sweet and sour apple-like taste makes it easy to recommend to those who are not accustomed to drinking sake. The strong fizz and lactic acidity is just the way I like it 😆 A blissful moment in the late afternoon.

A special sake that I would open on a normal, gloomy day like this 🍶 Light aroma like pears 🍐 and a fizzy feeling. Soft sweetness and refreshing yogurt-like acidity. It was still the best. It's only been three years since it was launched as a brand, but it's become a highly rated brand. I suspect it will become increasingly difficult to find💦. Hana-no-Kou Sake Brewery made a new start with only 14 liquor stores in the country. It must have been a difficult time with the Corona disaster. The brewery's unique philosophy is based on the ancient Japanese word "sanshuchi," which means "land of birth" or "god of the land. It is said that they share the "heart of prayer" related to agriculture and sake brewing with the people of the entire region, and contribute to the preservation of the natural environment and the inheritance of the traditional culture unique to the region. The label states the company's philosophy: "Earth, water, rice, guidance, prayer, and return," the six production climates resonating with each other to produce the sake. Because this is a Ninonozo, there are two engravings on the back label. The low alcohol content, the unique aroma of Kumamoto No. 9 yeast, the inherent sweetness of the sake, and the thick texture of the local brewing water are to my liking. Gentle on the heart that is wispy from work~!

I've been waiting for today! Welcome Kabutomushi😍A summer-only sake reputed to be an adult lemon squash. I had never had it before and was only looking forward to it! In company conversation ▶I bought this year's Kabutomushi! ▶Eh! I can't believe it's that time of year already! ▶ It's already out in my hometown! I have to check my hometown! I'm not talking about beetles. I heard they changed the yeast this year, so it has more acidity and low alcohol clarity. I don't know about the past, since it's my first time here 😫. The softness of the super soft water brewing and the citrusy freshness. I could tell it was a lemon squash 😊.

Here is a warning to open the bottle. The cloud-like mark on the label is said to resemble the image of a cloud of cloudy water rising out of the bottle, so carefully open the bottle, letting off the gas little by little. As the reputation suggests, the lees are rising and rising! The bottle is brewed by Oroku Shuzo, using Yamadanishiki produced in the Kamiihigashi district of Higashiizumo Town, Shimane Prefecture, and is synonymous with sparkling nigori (frothy nigori). Kojiya is the trade name of the Ishihara family, and the name reflects their desire to "always look back to our origins as a merchant family, and to be humble and frugal in our sake brewing. All of Ohroku's sake is unfiltered and stored in bottles, with one to five different types of sake from a single brewing tank. Ideally, the sake should be opened immediately. It's gassy and sharp, with a melon-like flavor and a touch of calpis that makes it easy to drink 😆 Not the best value for money, but delicious 💃It's a limited production sake, so I'm happy to welcome it to the market😍.

When I bought it, I was advised that the gas pressure was so strong that it might spurt out while opening. I was so surprised! I panicked and covered it with my palm to release the gas pressure little by little. I was so shallow that I didn't want to spill even a drop. The first time I went to the restaurant, I was surprised to see the bottle of wine. It was sold like hot cakes at the store. The rice is 100% Comet from Hokkaido, the ratio of polished rice is 50%, and the alcohol level is 16%. The aroma, gasiness, and lactic acidity are just what I expected. Perfect for summer days!

I thought I opened the bottle carefully, but in a split second, it went to the top of the bottle with a loud bang. I was so excited that I let out a loud scream. It was just like a fireworks display... All the ALPHA series are "Bodai Hashimoto brewed". It is said to be the oldest sake brewing method in Japan, and is the prototype of the "sake yeast yeast" and "Yamahai yeast" brewing methods. Pleasant sourness by lactic acid fermentation. It has a watermelon-like taste. After a while, it has a melon-like taste. It is refreshing with a sense of gas. Alcohol: 11%, 500ml, easy to drink 😆.

Lunchtime drinking! Cold sake, the best day of the year. On a day like this, I want to have something shuwa😋. It is a supreme time to go to the sake shop and choose which one to welcome you. Local contract rice, Akitsuho, is used. Cosy and "the origin of Kaze no Mori" sake is here. It is unfiltered, unfiltered, unblended sake. Fresh but with a sweetness and aroma like dried grapes. It is light and gaseous with a mild flavor made with super soft water. A happy time in the late afternoon. I'm glad I worked hard this week too - let the gloom melt away!

This is a junmai sake that can be drunk crisply in summer, so here it is in its refreshing guise. It won first place at last year's Kura Master in France. The rice is polished to 60% Dewa Sanzu from Yamagata Prefecture, and the alcohol content is a low 14%. It has a good acidity and sharpness. If it is cost-effective, can you enjoy it without thinking about this or that? No, you can drink it in large gulps. It is known to go well with fried horse mackerel and French fries, so we had it with mashed potatoes and sautéed salmon with butter flavor. Because of the delicious rice flavor, I change the glass to a bigger one. The aroma is enhanced. It's a good time of year for cold sake!

Here's a fresh, summery look. It's not even a summer day today, but I decided to open the bottle to blow off the recent humidity. Sparkling is Nanaken's specialty! It's cosy, sophisticated, clear, refreshing, gassy, and also creamy. It's also low in alcohol, so it goes down easy. Oh no, it's dangerous! To enjoy the lees flavor, drink it in a fat wine glass. I thought I would drink it in a champagne glass for the fizziness, but I like to spend a leisurely evening drinking. The weekend is already over!

This is my favorite local product. The production is small, and "too good to drink" has been triggered, so I never had a chance to open the bottle. This time, since we were able to obtain the same bottle, we can enjoy it with an open mind. Since we already have a bottle of Rokuho sake, I can't stop grinning every time I open and close the fridge. When I open the bottle, I immediately feel a rush of excitement. Don't be in a hurry. I calm my mind and take a sip. It's delicious! Is it calpis? It tastes like a lactic acid drink. It is refreshing, but it is also very smooth and full of the flavor of Yamadanishiki. The fizziness is also good. I think the last time I had this was with Mitoyo brewery 🤔The only difference is whether it was made in a tank or a wooden vat, but it is very different. If you want to enjoy it lightly on a normal weekend, this is the one for you. I don't know when to drink the Rokuhojo that is on standby in the fridge, it's too special!

A reward for a hard day's work. I will have a glass of this Bordeaux wine from Sentori, my favorite wine 🤤. I can't stop trying this and that, but I hear Sentori is being rebranded, so I'm trying to be proactive in welcoming them back. Welcome to my home ✨ Juicy, sweet and sour. Muscat and lychee-like flavors. Maybe banana-ish as time goes on 🤔. The snack is a cold chilled chuka 😅A holy drink makes a Friday day special, even if I'm exhausted. I've got Siberia and tomato & basil potato chips to sweeten the potatos! A great weekend to start, thank you 😊. Second day of opening the bottle. Yesterday's freshness has been replaced by a roundness and a clarity that stands out while still retaining sweet and sour notes. The fruity aromas are less pronounced, but the wine is still refreshing and light!

Maybe it's because it's getting warmer, but I've been hooked on the light muddy water. Today's bottle is a cute one with a white dove label, a symbol of peace. Hato Masamune was founded in 1897. It is the only brewery in Towada City, where winters are bitterly cold. The brand name comes from the fact that a white dove that lived in the brewery in the early Showa period was enshrined as a guardian god. The product is distributed exclusively by special dealers. This season, instead of Yamada-Nishiki, it is made from 50% polished Gin-Karaboshi rice produced in the prefecture and 13% alcohol. It is perfect for summer days and should be served crisp and chilled. When I opened the bottle, I almost spilled the bubbles that were bubbling up. The gasiness, acidity, and elegant sweetness are delicious! The side dishes were soaked garland chrysanthemum and mackerel with grated ponzu. Kimchi, white rice and vegetable miso soup. The flavors go well together. The after-dinner sweet was a dove sable that was given to us by chance.

We have been waiting for you! Sentori Premium Series. I was delighted to get this one from the three products, "Sentori Ippou", "Rei", and "Sake". I quickly prepared a glass of wine and carefully drank it. It is unfiltered, unfiltered, bottle-enclosed, and fire-aged. The rice is Domaine Sakura Yamadanishiki, with a milling ratio of 40% for koji rice and 40% for kake rice. It has a gorgeous sweetness, smoothness, minerality, and pleasant acidity. The white peach-like sweetness and bitterness give it a complex depth. Excellent. I decided to pair it with chilled Chinese noodles, but I am not sure if it would be a good match for such a special sake. Let the exciting daytime drinking begin!

I decided to drink this on a summer day, from the morning walk 🐕‍🦺. Drinking at home, I can't help but look forward to it. My favorite Organic Naturals series is made using an ancient process and a special method: natural yeast, live yeast, and wooden vat brewing. The bubbles are full of the deliciousness of organic Kame-no-o, which is a sparkling wine made with over 90% polished rice. There were no rice-polishing machines, no sake brewing rice, and no sparkling sake that would have existed in the Edo period. I was so excited that I let the bubbles bubbling when I opened the bottle. What a blunder 😥 The sparkling carbonation, minerality, and flavor is a bit like nata de coco? The flavor is delicious, so you can enjoy it slowly while enjoying the gaseous sensation. We started with mushroom salad as a side dish. Since Senkou is the main ingredient, I simply used basil, balsamic vinegar, olive oil, and black pepper. Kame-no-o has a powerful flavor that is not lost when combined with fresh ingredients. I feel the taste of lactobacillus is enhanced when combined with the snacks. The appetite grew and grew, and the finishing touch was to make a hand-roll with mentaiko, shiso, rice, and grilled nori seaweed. Everything tastes so good!
