This is the third in a series of Shinshu sake. It is delicious, with just the right amount of sweetness and aroma, yet somehow refreshing. Four cups of sake will be empty in no time.
It is said to be made with the spirit of competing with Jyushiyo. The aroma is strong and sweet, followed by a pungent spiciness. I don't like this unique aroma. No repeat!
Unlike the 99 series, sweetness and acidity are moderate. It is mild and easy to drink. It is just a modern sake with the best of both worlds, which is typical of Kangiku. No wonder it is so popular!

This is my first Akabu. I thought it would be a trendy fruity and sweet sake, but it is quite moderate. At first sip, I felt the impact was not strong enough. However, while eating, the sweetness and umami do not get in the way. It is a modern style sake, but it is basically a food sake and you will never get tired of drinking it. I finished it right away.
Sake with sweetness, umami and acidity. It is different from Masumi. The sweetness and the sharpness of the acidity hold the characteristics of Nagano sake. Classic name but modern.
The fizzy, chattering sensation can be felt even after a few days. The ginjo aroma is weak because it is junmai, but it has sweetness and umami, and ends with a firm bitterness. It is a modern junmai. 3.5/5
It's not my first time, but it's been a while, and it's a modern Junmai. The ginjo aroma is thin, but the rice flavor is delicious, and the bitterness brings it all together. Easy to drink, well-balanced food sake.
