Souvenir of Saga sightseeing.
The impression I had when I tasted several kinds of sake at the brewery was that it was light, but this one is a mellow type.
The aroma was a bit smoky. The taste is delicious, with sweetness, umami, acidity, and a complex flavor typical of sake.
I had my first "Hiran" in about a year at an izakaya (Japanese-style bar) in Nagasaki. It has a distinctive acidity, followed by a sweetness that comes in a jiffy. The price of 650 yen for a 130-140 ml glass seemed like a good deal.
Light fizzy sound when opened.
Sake that tastes better with time, laid down for 3 years. Slightly brown in color due to Maillard reaction. Delicious sweetness like Shaoxing wine.
First sake from Kagoshima.
A dull fizzing sound when the bottle is opened. Slightly candy-colored.
After opening the bottle, the impression at room temperature was fruity, but with a strong bitterness and a hard taste. When cooled in the refrigerator, the bitterness receded and it was easy to drink.
A few days after opening the bottle, the sweetness increased and it became mellow and fruity. I prefer to drink it after some time ✨.
Light effervescence when opened. Sourness and moderate bitterness. Mature taste typical of nama-moto sake.
The overall impression is of a fresh and calm sake.
