タイタイセイセイ
Suki no Sato from Ayagiku Shuzo in Kagawa.
It is super dry, with a sake strength of +15.
It is refreshing, with a slight acidity and umami of rice, and a slight bitterness in the aftertaste.
I recently realized that this lingering bitterness is a factor that leads to the crispness and refreshing feeling.
It is best at room temperature. There is no bitterness at all, so it is easy to drink without limit. It is easier to drink than water.
It is dry and has no quirks, so it is ideal as a food sake, but it is also great as an evening drink.
It's not juicy or fruity like most sake nowadays, but it's definitely one of the best I've had. I will buy it again.
