Suki no Sato from Ayagiku Shuzo in Kagawa. It is super dry, with a sake strength of +15. It is refreshing, with a slight acidity and umami of rice, and a slight bitterness in the aftertaste. I recently realized that this lingering bitterness is a factor that leads to the crispness and refreshing feeling. It is best at room temperature. There is no bitterness at all, so it is easy to drink without limit. It is easier to drink than water. It is dry and has no quirks, so it is ideal as a food sake, but it is also great as an evening drink. It's not juicy or fruity like most sake nowadays, but it's definitely one of the best I've had. I will buy it again.

Aomori Tasake The sake is said to have a sake level of ±0. Since I bought it without much research, I thought it was a Niigata-style light and dry sake because of the classic label and the special junmai (junmai rice) flavor, but the moment I poured it into the glass, I noticed a fruity aroma. I realized. When I put it in my mouth, I found a fruity aroma and an umami flavor with a hint of acidity. There is a slight bitterness in the aftertaste. The fruity grape-like flavor is similar to that of Toyobai (Roku), also from Aomori. The taste is more modern than I expected and different from what I expected, but it is delicious. And I am glad that I could buy it at the regular price.

Sake degree: +5.0 Acidity: 1.5 Kurogyu Junmai-shu is a junmai-shu from the Meite Sake Brewery in Wakayama Prefecture. It has a mellow aroma and a good old-fashioned sake taste with a delicious rice flavor. Although dry, it has a long, lingering finish with a slight bitterness from the alcohol. When heated, it tastes refreshing and ideal as a mid-meal drink. It was quite tasty when served with rolls. However, I personally prefer it at room temperature, where you can enjoy the gradual expansion of the flavor and the long aftertaste.

Yukio, a local brand of Niigata Prefecture's Aoki Sake Brewery, known for its Tsururei brand. It was a gift, but I got it with a stainless steel cup of "Yukio". It has a dry, light, clean taste similar to Tsururei. The perfect taste for a mealtime sake. It has a clear, fresh and fruity taste with no cloying taste. It is so dry that you can drink it as much as you want. I want to drink it again!

Purchased from Wakamatsuya Sake Shop Eiko-Fuji from Fuji Sake Brewery in Yamagata Junmai Daiginjo's sleek and fruity aroma with the gusto and gasiness of unfiltered raw sake! Of course, it's sweet and I'm not a big fan of sweetness, but it's delicious! I think it has a good sharpness. I tried heating it up to try it out, but I think it's best served cold (the taste doesn't change much and the sweetness is more noticeable). I guess the amino acidity and acidity are two different parameters? The alcohol content is 16.4%, not too high and not too low. As I am of the overwhelmingly light and dry style, I would not repeat this sake, but I can easily recommend it as a modern and easy-to-drink sake. I remember the price was about 1800 yen (not cheap, but cheap).

Purchased from Wakamatsuya Sake Shop Yamamoto Sake Brewery's "Dodara". The sake is super dry with a sake strength of +15. The taste is light and dry with little bitterness and acidity. When drunk at room temperature, it has a nice sharpness and goes down smoothly and infinitely, just like water. When drunk cold (or on the rocks), it has a slight sweetness and acidity, and a slightly heavy feeling. When heated up, the aroma is fuller, but the sharpness increases, and there is not much aftertaste. Personally, I think it tastes best at room temperature. Is it my imagination that it seems to have a slight sourness to it?

Tatebayashi is "Oze no Yukidoke" by Ryujin Shuzo Dry junmai sake The name says "very dry", so it is clear that this is a sake for those who choose to drink it. It is a gem that will definitely meet the expectations of sake lovers who dare to buy this sake. The rice polishing ratio is 60% and the alcohol content is 16.5°. The aroma is soft and floral with a full flavor, and the dry taste is smooth and crisp. This is Junmai sake! The sharp taste makes it a perfect sake to be served with sashimi and other dishes. Personally, I think it is quite delicious! It is not the fresh or fruity sake of today, but you can taste the acidity and umami that only sake can have, and this crispness seems to be the very best of sake. Very tasty.

Morishima from Morishima Sake Brewery, Hitachi City, Ibaraki Prefecture, Japan Junmai Ginjo of Yamadanishiki It is fire-aged, but you can feel a slight gassy sensation right after opening the bottle. The taste is light and slightly dry. It has a juicy, fresh, grape-like fruitiness that is impressive today, with a slight bitterness in the aftertaste. It seems to be a pure sake, but the alcohol content is gentle at only 15 Perhaps because it is dry, it leaves a strong bitterness in the aftertaste, so it is not suitable for drinking on its own easily. Delicious! But I didn't like the bitterness... (I don't really like ginjo-shu either) (I don't really like ginjo-shu either) But it's a local brewery, so I hope they do well! You can buy it at the tourist plaza at Hitachi station.

Terada Honke no Musuhi Curious about the words "germinated brown rice sake", I ordered it. Polishing ratio 100%, that's brown rice, so it's not polished. I had it warmed up. It looked milky white, like amazake? I thought it was amazake! The lactic acid aroma and strong acidity is similar to that of Bodai Hashiro sake. I think it is a good sake with umami and acidity. It is not something I would recommend, but I personally think it is worth trying at least once.

Gunma's Machida Sake Brewery's local brand "Seigiri". The pop-up in the liquor store says it is almost always sold out at the brewery. It is a new sake, freshly pressed, with a gentle gassy, fruity freshness. The aftertaste has a hint of bitterness, and it is easy to drink because it is not too strong. At 18%, it's a strong sake, so be careful not to drink too much! Delicious!

I happened to find Terada Honke's sake at a liquor store and bought it unexpectedly! Sake with a 90% rice polishing ratio, natural yeast, no filtration, and a lot of attention to detail. At room temperature. The color of the sake is yellowish because it is a sake yeast, and there is a faint lactic acid aroma. When you put it in your mouth, you first taste the characteristic strong acidity, and then the umami and richness typical of a sake made from the traditional sake yeast. It has some peculiarities, but it is basically dry and goes down the throat easily. The peculiarity seems to become milder when heated, but personally, I think it tastes better at room temperature. It may not be for everyone, but if you like it, you'll love it! For around 1300 yen (720mL), this is a great value! Very tasty!

Purchased after being recommended by Takahashi Yo Shoten. It is a blend of sake made by the previous toji that remained in Mr. Takai's brewery, known for its rocks. Hot sake. It can be drunk at room temperature, but a slight sense of maturity can be felt. The sense of maturity is also noticeable, but when warmed up, the restrained flavor and aroma blooms and fills the mouth with a full flavor. Very tasty!
