Junmai Ginjo of Yamadanishiki
It is fire-aged, but you can feel a slight gassy sensation right after opening the bottle.
The taste is light and slightly dry.
It has a juicy, fresh, grape-like fruitiness that is impressive today, with a slight bitterness in the aftertaste.
It seems to be a pure sake, but the alcohol content is gentle at only 15
Perhaps because it is dry, it leaves a strong bitterness in the aftertaste, so it is not suitable for drinking on its own easily.
Delicious!
But I didn't like the bitterness... (I don't really like ginjo-shu either)

I drank this again today and found it to be more balanced than the one I drank on the day I posted.
I don't know if it depends on my physical condition on the day I drank it or if the flavor has changed over time, but it seems mellower and sweeter.
It was delicious.
