I drank this sake with Otters, but it's up now and then. I wonder if it's the kind they often have at izakaya or something. I think it's a house wine kind of thing. It was the first time I drank it at home. I wish I could always have this kind of unpretentious alcohol on hand. Manamusume...I have never heard of it. It's edible rice! Drank at a beach house. It was neither junmai nor honjozo. Just a cup. Sipping a cup of cold sake. It was good. It was better than the one cup I drank at the same place last year. I received a mid-year gift from my daughter-in-law's father. I got it cold (room temperature) right away from Kubota, which I drank the other day. I always drink sake cold, unless it's a winter drinking party. It's so good. It's good at room temperature. Another wine story. There are many wines that I enjoy as the temperature rises and they open up. I wish I could enjoy sake the same way. I would like to be able to enjoy Japanese Sake the same way. Corks may be of different quality now than in the past, though. So, I tried to list the content amount for now. I don't have that kind of sense or palate at all, though (laugh).

Many of Kitayasu Brewing's sakes are sweet. That's why I, a dry sake lover, tend to shy away from them. But I was drawn to the name "Iyari," which means "Iyari Marsh. Iyari-ri is the Iyari Marsh. The water from Iyari-ri is used as tap water in some areas of Omachi City. The water is clear with a slight yellowish tinge. Like white wine. The disk is thick and the jamb is strong. There are suspended solids. Yellow peach aroma, fruity. Mouth-filling attack. Tropical flavor. Not unpleasant sweetness, but broad, deep, and delicious. It is delicious. The second cup. I stopped by Harashin to buy dinner on my way back to Niigata. It was the first time I bought and drank Kubota at the store. I have never had a Kubota that I really liked. Of course it must be delicious, I know this is a sake for everyday use only. But there are many other sake that are good too. Of course, this one is delicious, too. But I feel that the old legend of Kubota being the best is getting out of hand. Especially in the mid-30s to middle age. I wish people would taste it and enjoy the goodness of Kubota and other sake, not just the name!

I prefer junmai sake that is not too ginjo, so this is my first daiginjo in a long time. Clear ginjo aroma. Pear or apple aroma. It was a clear bottle, but not in a box, so I wondered when it was released from the warehouse. I bought it because the production date was last month. In this case, the date of manufacture is the date of commercialization. It says on the label that it is aged in buried snow. I don't have a good impression of this type of stopper. I feel like it is a decoration with a strong souvenir design. It has a slight yellow color. The aroma has the same calming impression as the color. Many of Hokian Brewing's sakes are sweet, but this one is not too sweet for my taste. Oh 💦 some of them are sweet and delicious 💦. It's also very full, and although it's a ginjo, it also has a thickening effect. This is a good food sake. Just the fact that it's made from 100% local rice makes me think it's 20% more delicious. The next day. What's wrong? Yesterday it tasted so good, but the second day it opens up too much, lol.

Production Date: March 2022 Release from the warehouse: April 2023 I used to prefer drinking the wallet-friendly super-harsh Junmai Ise, but when I saw Junmai Ginjo, I decided to buy it. There was also a super-harakuchi junmai ginjo in the store, so I hesitated, but I bought this one because the production date was a year ago and it was released from the warehouse last month. Pale yellow color. Transparent. Subdued, but definitely the apple aroma described on the back label. Smooth attack. Dry but sweet flavors through the nose. The nose is dry but has a sweet flavor that escapes through the nose. Hmmm... It would be better to raise the temperature a little to balance the aroma and flavor. It's too sharp, and I think I prefer it without the ginjo. I'll have to compare them to see if I like them better.
