This is a Junmai Ginjo made from unadjusted unpolished flat rice. I saw this in a liquor store's stock information and immediately got it. It is a fusion of Aiyama and Omachi, in a good way, just as I had imagined. But that's a great balance, isn't it?
First pressing, lightly nigori, it was sold out when I saw it on a liquor store's website comment in January, but it was restocked and available. It has an aroma of melon, a refreshing cleanliness that is similar to my favorite Shizuoka style, and the sharpness of aluzoe. I can't stop drinking it.
Cattle set, the rice polishing ratio of 47 in French. It is a gift from a relative of the brewery. It is gorgeous like Yamadanishiki, and has acidity and a good taste. We got a good one.
Junmai Ginjo unfiltered Junmai Genshu. Miyamanishiki, it is brewed well, and has a strong flavor. But it also has a bitterness like Omachi, and the cup goes on exploring the flavors.
Unfiltered Junmai Akaiwa Omachi and Aizan. The other day's Akaiwa Omachi was so delicious that we repeated it at another shop. We also got Aizan at the request of Kami. Loveman is very powerful. It's been a week of drinking a lot of Kaizen.
Unfiltered Junmai Akaban Omachi. It has been a long time since I had a chance to try this sake. This is my first time to drink Akaiwa Omachi. It is the best match between the beautiful taste of Kaikun and the good taste of Akaiwa Omachi. It is the best match for me. It is so delicious that I can't stop drinking.

Hoshizora, Junmai. It is soft and full on the palate when served cold. Warmed up, it has the aroma of junmai, and you can really taste it. The label with Mt. Ishizuchi and Orion is wonderful.
The third kind of sake set. Red Label Junmai Ginjo. It has the gorgeousness of Yamadanishiki as a base, but it has a restrained bitterness, making it a calm drink.

This is a new brand of "Zen" from Seiryu Shuzo of Iyogiya.
It's gentle on the palate, but it's also powerful and has a sanyu-like flavor that will keep you coming back for more drinks as you explore the flavors.
Junmai Genshu Hiyaoroshi. We had a lunch at a buckwheat noodle shop on our way home from Mt. You can feel a slight sweetness in the mouth, but the taste was more refreshing than I expected. It might be good for lunch.
