This was a surprise.
It sounds cheesy to say so, but it is an all-around great sake.
Taken by itself, it is a rather modern sake with a good balance of acidity and umami.
Today, I paired it with various foods such as vinegared oysters, walnut cream cheese, eel rolls, and komatsuna greens,
It matched each of them in a completely different way,
