I found this Junmai Daiginjo of Ikegami at Todai shop. It had a strong yet refreshing taste that I have never had before. I wondered if it was the right wine for the salmon, bread and rillettes, but it was an unexpected match. It is indeed sake.

While visiting Tochigi, we visited a sake brewery. We visited Wakakoma-san, which was used as a filming location for the drama JIN. The sake is made in a wooden vat, shizuku-dori, tailing and unfiltered, and has many features that I have never had before. It is a daiginjo with lactic acid bacteria and a sweet taste. When I put it in the chirori, it was so fizzy that it was full of bubbles. The toji-san told me that the label was made of cloth and could be used as a coaster, so I had to remove it before taking a picture, which was a big mistake.

I found Tokyo Minato Brewery by chance during a walk. I impulsively bought the same specs as Edokaijo, but without washed rice (sustainable). Edokaijo is mellow and fruity, and washed rice product is clear and light. I was surprised at the completely different taste.
