bamboo shoots boiled, sliced, fermented, dried or preserved in salt, then soaked in hot water and sea salt 14 Junmai Juju-kirekuchi Yellow in color. When cooled, it has a habit of lactic acidity and aged aroma. Warmed. The nose has a woody, savory aroma. It has a fruity and gentle sweetness as well as a sense of rice. A little sour. Numb, sharp and delicious. 15 Chouji Junmai Ginjo Kinmon Nishiki Ajiginjo Slightly pear aroma. Ume. Soft, subtle sweetness and a refreshing citrus-like feeling. A little bitterness at the end. It has been a year since it was made, but I think it's good. The sake is named "Shigetu" after the sake brewer Takeshige and the toji Shigeta. The toji explained this to us when he opened the brewery in the past. SAKE Country Tourism Achievement Prizes. The third prize is from the Takeju Sake Brewery in Saku.
