Niida's natural species "Yamamori" was created as an original by the outdoor brand patagonia. Despite its 85% milling ratio, it has a clean, refreshing taste. It is also very sweet with a hint of the Niida flavor. A happy drunkenness with the best collaboration of Patagonia and the Niida head family, who are sincere in their manufacturing for environmental protection and sustainability of the earth.

I bought it at a booth in my neighborhood in support of the disaster-stricken areas. Fukumitsuya also has a brand of Kagatobi, which I like, but it is a little too refined for my palate, which is accustomed to dark sweet sake. It seems that I prefer a bit of a tangy taste. It is delicious in its own way, though.

Hakkaiyama Junmai-shu, sold only in the Uonuma area. It is crisp and spicy with a clean finish. Not too spicy. I'd like to have some strong-flavored snacks, such as karaumi (dried mullet roe).

It is not a sake, but an authentic shochu made by Shimizu Seizaburo Shoten, well known for its Saku brand, when the company was still Shimizu Brewery. We found it at the usual Tsukiya Sake Shop. It has a delicious, fruity, buckwheat aroma! They don't make it anymore, I guess it's a rare item. I'll drink it with care.

When I had just turned 20, I drank Masumi for the first time and loved it. Tsuruya original, my favorite supermarket in Nagano. It is a junmai ginjo, but I love the taste of the rice and koji malt. The sweet flavor of Masumi is the origin of my love for sweet sake.

I asked for a dry sake that I could drink in small sips every day. It is crisp, spicy, thick, and delicious, but it could be a little more fruity. It was so good that we ran out on the fifth day.

The last bottle of the souvenir series. This is Mikotsuru's raw sake, which last year was a junmai sake. This one!　Fresh and new-born! Junmai sake has a slight peculiar taste that I like, but the bubbles softly neutralized it and made it nice. I don't need any snacks. I drink it in the middle of the night.

I was unable to go on my annual trip to Nagano this year for some reason, so I asked a friend of mine to stock up on recommendations at my usual local sake shop. The rice is grown on the company's own farm without using herbicides or pesticides and with organic fertilizers. The rice is delicious, and when drunk cold, it is fragrant and fruity with no cloying taste. It has a sweet and sour taste with a pungent aftertaste and a good amount of bitterness. It has a strength that lingers in the mouth until the end, so it is best to drink it in small sips. It is considered as a food wine. Delicious.

When I went to my usual liquor store to stock up on Niida Honke, I saw a line of bottles that I had never seen before. Ota Sake Brewery in Tottori. Tottori sake made with rice from Tottori. They are particular about making it separately for each rice field. The rice is Wakazakura-machi grown strong. I have never heard of this name before. The name of the town is also very nice. Fruity and dry. The aroma is very nice. I was told that it is recommended to be served hot. It was completely gone with oden. Next time, I will try another rice.
