This is a limited edition sake from the famous Aomori sake brewery, Toyopai. The mild sweetness of the rice and the clear transparency coexist in the mouth, making it very easy to drink. It has a unique Tsugaru flavor that is different from that of Hassen or Tasake. #Houpai #Aomori #Hirosaki

This is a limited edition bottle from the brewery using Reimei, a rice variety grown jointly by the breweries of Tasake, Toyofu and Mutsu Hassen. It has a rich grape-like sweetness and sharpness that coexist to create a highly complete flavor typical of Hassen.

The first drink of the new year was Izumikawa, which I had been saving. Compared to other Aizu local sakes, it is more crisp and hard-edged with a hint of rice. It seems to be easier to find than Tobiroki, but it's said to be equally popular among the locals. It is only available in one bottle, so it is best to drink it at New Year's.

This is Amago no Tsuki which I bought in Hiroshima. The sweetness with a slight rice-like taste is kept low, and it is elegantly dry. It seems to go well with meals, and it has a well-balanced finish that can be drunk on its own. #Hiroshima #Kure #The moon after rain

This is the blue label of Tatenogawa, a brewery limited edition, using Dewa Sanzan rice. It has a strong rice-like flavor, and the moment you put it in your mouth, it has a sweetness, but it also has a sharpness that makes you feel spicy at once. It seems to go perfectly with Japanese food. #Yamagata #Yamagata #Sakata

This is Ichibai Suisei from Fukurokuju Shuzo in Akita. The bottle is very stylish and cool because it is only for sake brewery. It tastes sweet with a hint of rice at the top and finishes with a lingering aroma of muscat. The atmosphere of the town of Gojome is also calm and impressive. #Akita #Hachiro Lagoon #Gojome Town #Fukurokuju Sake Brewery #Ichihaku Suisei

This is a Junmai Ginjo, fire-aged, limited edition of Miyazumi's brewery. Unlike the Collage, the muscat-like fruity taste is rather subdued and slightly sharp. It has a slightly sharp taste. It has a taste that lingers, and you can drink it with pleasure.

Collage is a local brew that is a perfect match for Tobiroki in Aizu. As soon as you put it in your mouth, its complex and fruity flavor spreads out, and you will be able to sip it without a break. I think I understand why it is a popular brand. #Aizu #Fukushima #Miyazumi Sake Brewery

Aizu's local sake, Miyazumi's Junmai Daiginjo is limited to the brewery. It was a deeply flavored sake with a banana-like aroma and a clear sweetness living together. The brewery is located near Tsurugajo Castle, famous for the Byakkotai, and can be visited on foot from the train station in Aizuwakamatsu. The fruity sake seems to be on sale. #Fukushima. #Aizuwakamatsu #Miyaizumi

This is a limited edition bottle of Shiraishi's famous sake, Zao. It is a Daiginjo with a 35% rice polishing ratio, and the moment you put it in your mouth, the mild sweetness of the rice spreads throughout your mouth. Tasting is available at the brewery, and the historic building gives a sense of elegance. There is also a limited edition sake available at liquor stores near the brewery. #Miyagi Prefecture #Shiraishi #Daiginjo

Akita is Kuribayashi Shuzo's Haruka. It is said that this green label is limited to the special dealers. It is not fruity, but the sweetness of the rice and the slight carbonation do not interfere with the taste of the ingredients. #Akita #Senboku-gun #Omagari #Haruka

My most favorite sake, Shuho. It is a super dry Junmai Daiginjo ver distributed only in the prefecture. At the top, it has a grapefruit-like sweetness, but then it quickly becomes sharp. Yamagata Masamune, Eikoh Fuji, and many other dry sake from Yamagata have a good balance of sweetness. #Shuho #Yamagata #Super Dry

This rare Ichinokura is limited to sake brewery tours. The sweetness is subdued and the rice-like flavor is strong, giving it a crisp taste. It can be enjoyed as a mid-meal sake, but it's also good warmed or heated. The sake brewery was as big as a factory. #ichinokura #Miyagi #Osaki City

The design of a beautiful sake. One of the sakes that led me to fall into the sake swamp. It has a gentle taste with a long lingering aftertaste based on a horizon of banana-like fruity and rice-like sweetness. It is said that it is limited to special dealers, but I saw it at Akita station. #Akita #HagoHonjo #Yurihonjo #Yuki no Kayasha

Atago no Matsu is brewed by Shinzawa Shuzo, famous for Hakurakusei. It is a rather rare type. When you put it in your mouth, it has a classical taste with a touch of rice, but then the sweetness spreads instantly, and the finish is refreshing and crisp. It is not too assertive even as a midday sake, and it has a high level of perfection that makes it easy to drink on its own. #Atago no Matsu #Miyagi #Osaki #Daiginjo

Kudokigayo is a famous sake from Yamagata. The taste has a melon-like melon sweetness and aroma, while the finish is crisp and well-balanced. Although the rice polishing ratio is 40%, it is very affordable. #Yamagata #Tsuruoka #Junmai Daiginjo

This is sake Mirai from Nanbu Bijin, a local sake from Iwate. From the moment you put it in your mouth, the sweetness spreads all over, and there is a slight fruity feeling like banana or muscat. The price was also reasonable! #wate #Ninohe

Another brand of Ichinokura sold only in Miyagi Prefecture. It doesn't have a strong aroma or fruity taste, but it has a standard flavor with a hint of sweetness. We drank it chilled, but you may find that a lukewarm or mid-meal drink will bring out its natural flavors. #Yamatoden #ichinokura #Osaki City #Miyagi Prefecture
