Nori
This sake can only be drunk at Houshi, a long-established inn in Awazu Onsen. Dry sake is made by Kobori Shuzo which is famous for Banzairaku. The dry sake is in the front of the photo. The color is slightly yellow, beautiful and transparent. The smell is sour. When you drink it, you can feel the alcohol. The tongue is a little tingling. It is said to be dry, but it is firmly dry. A bitter taste remains. The sourness is quite good. You can also feel the lactic acidity. It may be Yamahai. I think the normal Banzairaku is cheaper and better, but it is a good memorial.
