Nori
The smell is sweet and gorgeous, which is typical of unpasteurized sake. There is also a strong smell of alcohol. The color is clear and slightly yellow.
It can be cut. The bitterness is strong. The sweetness and mellow aroma of unpasteurized sake spreads as soon as you drink it, but it is soon cut off by the strong bitterness. After drinking, the bitterness lingers. There is a sharpness that seems to disappear as if the sake evaporates on the tongue.
It is quite delicious. Ippongi is a good brewery.
