I thought that only Yoshidazo had the U series, but I didn't realize that Tetsukawa also had it. This is Yamabushi Junmai unfiltered original sake with an alcohol level of 13, which is a comfortable level to drink and easy to drink.
Tasted three brews made with Aisan at the same time. This one, Hinari, was the lowest abv, 11 degrees. The Seimi Buho did not seem to be labeled. This one had the most bubbles, you could see they were all tiny solid little bubbles, so the taste was very crisp with a fruity flavor at the same time.
Tried three brews made with Aiyama at the same time. This one on hand was the lowest of the fine rice step-ups at 33%, and the highest alcohol of the three at 15 degrees. The flavor is very clean, crisp, and elegant with a slight spice and bitterness.Kagami has a nice cup!
Tried three sakes brewed with Aiyama at the same time. Windy Mori is a 60% refined rice step with an abv of 14. It has subtle bubbles and is slightly sweet with fruity notes.
Rich in sweetness and flavor, with a bit of complexity. If you don't like the flavor, the sweetness of this wine can mask a lot of the flavor at low temperatures.
