This sake was served at a soba (buckwheat noodle) restaurant with mountain sea urchin tofu. Yamahai gives a rough impression, but the moment you put it in your mouth, it has a crisp feeling with a sourness, followed by a full-bodied, umami flavor.
I wanted to drink it! Tasted fruity right to the very end!
Personally, I think it was too sweet. I think it could have been a little drier to match with the use of the wine.
It is sweet, but not too sweet and refreshing. It can be used with a variety of dishes. It may be a little unsatisfying on its own. It is good because it is not habit-forming.
