Gomei Kaisha Oki Daikichi Honden(Shirakawa city, Fukushima pref. Sake degree ? Rice polishing ratio: 60%. Raw rice: ? Instrument Masamune Special Honjozo 2021 session4 Honjozo is made by adding alcohol. But this is not that. But this one is completely different. As the back label says, the attack is soft. But it is crisp, and goes well with greasy meals. It is also good with oily food. I paired it with vinegared mackerel. I paired it with vinegared mackerel, and it mitigated the fishy smell and oiliness well. How do you add this without killing the goodness of the original sake? It seems that Honjozo is actually a very deep brew. Instrument Masamune is the embodiment of this. I've been paying attention to it lately.

As I was impressed by the taste of sake after drinking Shinsei I was so impressed by the taste of sake that I couldn't leave it behind (laugh). My impressions on the first day of bottling at room temperature. The appearance is a greenish yellow like rice straw. The aroma from the koji is strong. In the mouth, the flavor of the rice comes to the fore. It's no wonder it's controversial. Overall, it has a clear taste without any miscellaneous tastes. It has a similar impression to the Shinsei. I'm looking forward to the recommended one week after pulling the bottle. It is a bottle that makes you feel its potential.
