Next was a special junmai sake. I think this is my favorite sake I've ever had. It is so delicious I could drink as much as I want. Unfortunately, it was not sold at the store and I could not purchase it 😢. I want to meet it again!

Aoki Sake Brewery (Minamiuonuma City, Niigata Prefecture) Sake degree +2, Polishing ratio 55%. Raw rice: Koshitanrei The rice used is Koshitanrei. It has a light and refreshing taste. There are nuances of muscat and pear. The mild rice flavor comes slowly. It is not dull, and it is good for drinking during meals. It is a good sake for a meal.

AKATAKE MOUNTAIN Akatake Sake Brewery (Morioka City, Iwate Prefecture) Rice polishing ratio: 60%. More acidity. But it's not an unpleasant sour taste. The full flavor of the rice comes later. It has a little gasiness, and the taste is refreshing on the palate. It's also sharp. It goes well with your food. Delicious.
