Last month I went to the Shinsei event at Tokyo Midtown Yaesu. It was a weekday and not too crowded, so I could drink a lot of Shinsei in a liberating space. The Fermen-type was my favorite. It has a strong acidity and a lot of volume. Lemon? It has a strong pineapple flavor. But it is refreshing.

When it was chilled and opened, it had a light dry and umami taste, but after a while, the taste changed to a thick umami taste.

I drank it at a hot spring hotel in Nishi-Izu and enjoyed it so much I bought it on the way home. I had no idea but it's still delicious✨ I would buy it again 😊.

I put last year's to bed for a year. It's still pretty but less pink than this year's 😍. The top transparent part has a strong flavor and when the bottom oli is mixed, it has a sweet and sour taste like an acerola. I wish I had the vocabulary lol The oozy pink when mixed was pretty too 🩷.

I went to Craft Sake Week. It was very crowded as it was the first day of Golden Week! Shinshu Kamerei Mari label was my favorite among all the saké I drank. It was so delicious.

It was dry and very soft. The cork flew off just as you said it would. It is my favorite nigori and I will definitely buy it again next year.

Hiyoroshi is recommended by the sake shop. The aroma is sweet but the taste is dry. But it is easy to drink. It was a cheap and tasty sake.
