The sourness came in with the umami, and then the sourness came in, and then it was gone. A little bitterness comes out. There was no sense of lactic acid. Where did it go? Lactic acid. Well, it's cold again. I tried smelling it in a wine glass, but the way you feel the aroma is totally different depending on the glass. The narrower the glass is, the stronger the sharp part of the aroma is. So I changed to a wider glass. The aroma was deadly, which I like. But where's the soy sauce? Where did it go? The soy sauce. Sourness-based mild flavor. Grain? Hay? Rice flavor? It is difficult to express the taste. The aftertaste has become a little longer. But when he gets mad, he gets mad.
