Mature aroma with the acidity of Yamahai. There is also a hint of aroma. Strong acidity. Full-bodied flavor, but surprisingly light. A calm sake.
Hot: Full-bodied umami. The acidity is strong. It's relatively light. A little astringent at the end. Aged Yamahai feel. Goes well with cheese.
It has been half a year since then.
It's been left at room temperature to air dry and become delicious.
Even if you don't drink well, once you learn to age it, you're invincible.
The bottle you've been dreaming of is also ready.
It stinks though.
