The sweetness is moderate, but I could feel the richness of the rice and the fruitiness, and it was delicious ^_^.
On the second day, the sourness and bitterness became less pronounced, and the sweetness and flavor increased. Personally, I like the first day better ^_^.
It's fruity and refreshing, or mildly umami, or something in between.
If you heat it up, you can feel the gentle umami and it becomes a good taste that you don't get tired of drinking ^_^.
Maruwa-san, I started out with fruity, refreshing sake, and ended up with the umami dry sake of the Ikegan Yamahai style, and the cheap but full of flavor Kenryo ^_^.

It's less peculiar than Tamagawa's Yamahai series, but it's got that robust umami flavor that is typical of Tamagawa, and the alcohol that comes out of the nose makes it refreshing and easy to drink, and it goes well with meals.
I prefer the punchier Yamahai when I drink Tamagawa, but many people seem to find this one easier to drink ^_^.
It is a freshly squeezed raw sake from Zanko Hourai. But it is an old sake that has been aged in the refrigerator for 2 years.
When I drank it cold, I could feel the richness like brandy. I thought it would be fun to warm it up, so I heated it up, and it was the best sake I've ever tasted, with richness and flavor.

I was able to buy a bottle of 2016BY at a reasonable price on Mercari, and being that it was 5 years old, I was excited to try it cold first, and it had the depth of flavor and mellowness that only an old sake can have, with an outline that never gets old! I was so happy that I heated it up... and needless to say, the harmony of richness, umami, and bitterness!
I'm so sorry I bought it at such a low price, but... really good sake has the unique flavor of old sake even after many years. I was impressed ^_^!
A stable Etsukaijin Junmai-shu.
It is the best sake to drink hot.
It's big-boned, with umami and bitterness. It's dry and crisp, and goes perfectly with a hearty dinner!
I'm grateful that I can always buy it at my favorite liquor store ^_^.
