We got the "second daughter" of the three sisters series with a cute label, Nabekanmuri. It is a limited sake. It's a grapefruit, sake and carbonated sake, perfect for summer (there's actually no grapefruit in it). However, it was sold before the rainy season, so it was a bit too early. The refreshing taste comes to the forefront, so the rice flavor is very slight. The alcohol content is 10% and it is very easy to drink. You can drink it before, during, or after a meal, and it's 500ml, so it's gone quickly. It was one of the products that I want to keep in my refrigerator forever.

I missed only "Dusk Orange" in a series of releases in the past few months, but the third honored chrysanthemum of this season is "Sunburst". From the first sip, the concentrated acidity spreads, followed by the usual soft lactic acid aroma that is typical of Kouyoungiku. Personally, I preferred Anastasia Green for its refreshing taste and lack of peculiarities, but all of them were very refined sakes. It's a pity that I can't express the difference because I only drink Koenigiku.

I usually drink Ginjo type sake, so I asked the owner of the liquor store for a sake with a strong flavor, and he recommended "Aizan" from Shichida. It was my first time to try Shichida. Indeed, the flavor of the rice is amazing! Aizan is so rich. I felt like I was eating the rice itself even though I was drinking sake. If I had to be extravagant, I would say that a little less flavor would have been better for my taste. But it is very delicious. Saga has many attractive sake breweries. Just be careful not to eat it with food that has a strong umami flavor, or you will lose out to the sake. If you look closely at the label on the bottle, you can see the word "Nanada" hidden in the word "unfiltered". How funny.

I tasted the feeling of summer much earlier with Koeigiku's summer sake "Hakugetsu". It's unfiltered, unpasteurized sake with an alcohol content of 12%, which is amazing. It has a gentle banana or pineapple aroma. Pineapple? There is also an aroma of lactic acid, which is typical of Koeigiku. It is more refreshing than Anastasia Green which I drank the other day, but it has a bitter taste. As the day goes on, the bitterness comes out, but as more time goes by, it lessens. It loses its freshness about a week after opening the bottle, so it is best to drink it as soon as possible. This is a very easy to drink sake that does not interfere with a meal. I'm looking forward to the next Sunburst.

I tried the Shizenshu "Genshu" before, but this time I tried the "Junmai Ginjo" in the green bottle. This time, it's the Junmai Ginjo in the green bottle. It has the same rich flavor and sweetness of the original, but is much easier to drink. I guess it's natural that this one is also 4-stage brewed. We usually drink beautiful Kaorozu, but sometimes it is good to taste the flavor of rice with a solid mellow sake.

The cherry blossoms have begun to fall and summer sake is on its way, so I decided to make this year's spring sake, Oze no Yukidoke. The natural pink color from the yeast and a lot of lees will make you want to drink it. A desire to drink? It will stimulate your appetite. It is very sweet and sweet like a sweet, but you can feel the taste of the rice well with the effect of the lees. I was surprised that it was not uncomfortable to drink with Japanese food. If you don't drink a lot of sake, you might think it's a strange sake, but it's not like that at all, it's a well-brewed sake. Personally, I liked it very much, but the -33% sake content might divide some people.

It was introduced in dancyu, so I got interested and bought it. The color is yellow. It has a sweet aroma, as if it had been aged. When I poured it into a bowl, there was a little bit of lees here and there. Anyway, the sweetness from the 4-step brewing is very strong, and the alcohol is also strong, so I couldn't drink so much at one time. I don't know how to match it with a meal. I think it's an aged sake, so it should be served with food that has a strong flavor, but to be honest, it's not my favorite sake. I wonder what I should do....

The first "Kaze no Mori" in my life! Polishing ratio 50%, 507 with No.7 type yeast. When I was looking for a fruity sake, the owner of the liquor store said, "Kaze no Mori is not recommended, but if you dare recommend it," so I gave it a try. When I opened the lid, I was greeted with a refreshing grapefruit aroma. When I put it in my mouth, I felt a little bit of foam and the flavor of the rice, but most of all I felt a strong bitterness. I wonder if this is a characteristic of Kaze no Mori? As the days go by, it becomes more and more mellow. I think it is best to taste it while it is still fresh, because once it settles down, I feel that the goodness of this sake will fade away. The fruity and bitter taste makes it difficult to pair with rice, but it is an interesting(?) sake. It was an interesting(?) sake.

I have no amateur idea if my first honored chrysanthemum was Anastasia Green, but I pre-ordered it from my local liquor store and got it! The upfront aroma was a faint yogurt? Lactic acid aroma? It's not a fruity ginjo scent, but it's a refreshing scent that excites me. When you put it in your mouth, it is still refreshing, but you can feel the umami, and it is a good sake. It is easy to pair with meals, and is also delicious on its own. For me, it was easier to drink than the Kaze no Mori that I opened at the same time.

Thank you for your comment, Kicksy - I could clearly smell the lactic acid, but my wife said she couldn't smell anything... Kaze no Mori 507 has a strong bitterness and a citrusy ginjo aroma that makes it hard to pair with rice 😅.

If I had drunk this sake in 1980 when it was first released, I would have been shocked. But now, 40 years later, I still have the impression that it is an old sake. I'm not a big fan of sake that has a strong alcohol presence, but this Dewazakura left me with an unpleasant feeling of alcohol after it went down my throat. The addition of brewing alcohol was strongly felt. It's a dry comment, but there are no special characteristics that stand out, and it gives the impression of being an ordinary ginjo-shu. I'm sorry for talking like I know what I'm talking about... The rice polishing ratio is 50, and I thought the brewing alcohol was unnecessary, but it is also important to protect the methods that have been passed down over the years and the fans that have been around since it was first released.

After all this time, I had my first bottle of Senkou. It may be a bad idea to have an organic naturals for the first time, but I happened to find it at the liquor store, and I saw that many people were drinking it. This sake is brewed using the traditional method of brewing, using only 10% polished organic Kaminoo. When you open the bottle, you can smell the Ginjo aroma. What kind of aroma is it? When you sip it, you can feel the sweetness and acidity along with a light fizzy feeling. I don't know if this sourness comes from the traditional sake brewing process or from Senkou, but it was quite shocking to me for the first time. Also, the rice is polished to 90%, but is that a problem? The aroma and sweetness made me wonder if that was a problem. It settles down after a few days, but right after opening the bottle, it looks like a white wine, and it would go well with carpaccio, carbonara, and citrus fruits. At least for me, it didn't match with normal Japanese food. Matching is important. It is a good sake to drink by itself, but I would like to try Senkou's Modern and Classic series.

The aroma is green apple-like. The alcohol content is a little high at 17 degrees for an unpasteurized sake, and you can feel the pungency, but the sweetness and umami are stronger than that, and it makes you think you are drinking a good sake! It was one that made me think that I was drinking good sake! It's perfect as a sake-within-a-sake! If you're a strong drinker, you'll probably consume more and more of it. I thought it was a purely delicious sake. Next time I buy it, I'll try it heated. I just happened to buy a bottle of Gangi, and it was featured in the March issue of dancyu 2021. There were many voices praising the charm of the acidity, but as a sake beginner, I didn't quite understand the acidity of Ganki.

I bought the saku when I noticed it on my first visit to the liquor store where I went looking for Kaze no Mori. It is "Saku Kaminoho" which is made from "Kaminoho", the best rice for sake brewing in Mie Prefecture. It is said that the capacity is 750ml so that there will not be too much when you drink it in a wine glass. (A wine glass is 125ml per glass). The top note is pineapple. The taste is sweet but complex which is hard to describe for me. It is a bit viscous and leaves a bitter taste at the end. As I drank it over the course of the day, the ginjo aroma settled down and the bitterness lasted longer. It has a strong aroma, so it is difficult to pair with regular meals. It seems to be good with sweets. Next, I would like to compare it with Z, a year-round product made with regular rice. (The owner of the liquor store said it was made with regular rice, but some websites say it's made with sake brewing rice, so I'm not sure which is correct 😅)

I found a small 300ml bottle at a nearby liquor store, so I bought it. It's a special junmai-shu called "Toyoupai" made from "Toyoupai rice", a rice suitable for sake brewing that is only used by Miura Shuzo. I had it at a chilled temperature, and it seemed to me to be a typical mellow sake. It is not that fragrant and you can hardly feel the sweetness. In addition to a bit of pungency, the bitterness was strong, so I'm not a big fan of it... The aftertaste was like a mixture of alcohol and bitterness. I thought it could be used as a wash when paired with something with a strong flavor. I wonder if it would have a different face if it was heated...

This is a freshly brewed sake that is only available outside of the prefecture. The aroma of the rice (Hidahomare) is combined with a fruity scent. I had it cold, and after a clear sweetness, a slight bitterness appeared, and finally a lingering alcohol taste. It's not watery, which is something I don't like, and it has a strong flavor (the sake I drank after this was watery...). I will post it next time) I really wanted to have it with sashimi...

This doburoku from Hida has the full aroma, flavor, and crumbly texture of rice (Hidahomare). It is a sweet sake for adults. You can drink it as it is, but I like to pair it with oden and crab. It is very delicious.
