After all this time, I had my first bottle of Senkou.
It may be a bad idea to have an organic naturals for the first time, but I happened to find it at the liquor store, and I saw that many people were drinking it.
This sake is brewed using the traditional method of brewing, using only 10% polished organic Kaminoo.
When you open the bottle, you can smell the Ginjo aroma. What kind of aroma is it?
When you sip it, you can feel the sweetness and acidity along with a light fizzy feeling. I don't know if this sourness comes from the traditional sake brewing process or from Senkou, but it was quite shocking to me for the first time.
Also, the rice is polished to 90%, but is that a problem? The aroma and sweetness made me wonder if that was a problem.
It settles down after a few days, but right after opening the bottle, it looks like a white wine, and it would go well with carpaccio, carbonara, and citrus fruits.
At least for me, it didn't match with normal Japanese food. Matching is important.
It is a good sake to drink by itself, but I would like to try Senkou's Modern and Classic series.
