I have no amateur idea if my first honored chrysanthemum was Anastasia Green, but I pre-ordered it from my local liquor store and got it!
The upfront aroma was a faint yogurt? Lactic acid aroma?
It's not a fruity ginjo scent, but it's a refreshing scent that excites me.
When you put it in your mouth, it is still refreshing, but you can feel the umami, and it is a good sake. It is easy to pair with meals, and is also delicious on its own.
For me, it was easier to drink than the Kaze no Mori that I opened at the same time.

It smells like yogurt, doesn't it? I also have Anastasia Green in the fridge, and I'm having trouble deciding which one to open first... I love Kaze no Mori, but I didn't know it was easier to drink than that... hmmm...

Thank you for your comment, Kicksy - I could clearly smell the lactic acid, but my wife said she couldn't smell anything... Kaze no Mori 507 has a strong bitterness and a citrusy ginjo aroma that makes it hard to pair with rice 😅.

Basically, I don't pair sake with food, so I choose sake that has a strong flavor, but when I think about pairing sake with food, my choice of sake changes.
