April is a time when something new begins. We want to enjoy sake without being bound by the conventional boundaries. From the first sip of this Hououmida, it is "gorgeous! It is easy to drink and has a good sharpness. This time, I paired it with seasonal bamboo shoots, udo with vinegared miso, and satsuma-age with fava beans. It is a perfect match with crispy snacks. How sharp is Aizu Shikon? I wondered how sharp it would be, and then I tried it, and what a refreshing drink! You can feel the acidity and sweetness like a young swordsman, and the fat from the horse harami skewer that I was paired with was quickly washed away, leaving only the deliciousness. The master, who spoke passionately about the greatness of the sake brewers, had my eyes burning as well. Oh, what a wonderful evening!

The red label Tobiroki-sama. You have met it, haven't you? It is delicious without complaint ️. The balance of acidity and sweetness. It's fresh but full-bodied, with a core that's elegant and refined. It seems to go well with any dishes, but this time it is a marriage with sashimi. Especially, it is excellent with sea urchin. Oh, I can't stop my hand from holding the sake cup. lol It is made from a rare rice called "Aizan". It is sold only once a year. On a certain site, it's sold for about 20,000 yen a bottle. I'm so happy to be able to drink it at my favorite izakaya, which I haven't visited in a while.

This drink was actually supposed to be drunk at New Year. But I don't remember anything after I took it out of the fridge... According to the person who was with me, I was sunk before drinking it... When I woke up in the morning, the bottle was empty, so the fact that the other people drank it well is clear. Well, today is a revenge for that. Freshly opened, it has a gassy feel and a fluffy aroma of rice. It has a firm mouthfeel with a lingering alcohol finish. When paired with an Italian side dish, it is a good marriage of more acidity and freshness. Oh, now I can do my best tomorrow too. LOL!

Tonight we have a sake from a friend who lives in Akita. This is the first time I have had Amanoato. It says that it is a mellow dry sake with a sake strength of +10, so I seared some shime mackerel I bought at a nearby fish shop on my burner and married it. If you drink it by itself, it is mellow but still has a strong alcohol taste, but after the shime mackerel, the taste changes to a refreshing one. Oh, I can't stop drinking both in the middle of the week. Thanks to my friend.

I can't help but hope that my usual go-to restaurant will somehow get me through this Corona disaster evening. Seeing the smiles on the faces of the people you always go to is what saves you in the end. As soon as I entered the shop, I was told "MIYASAKA is in" and I remembered that I drank up the MIYASAKA that was here last time. LOL! Fresh mouthfeel, banana, yogurt, and a firm aftertaste. It is easy to drink and you will never get tired of drinking it. This time, I married it with fried oysters, ham cutlet and croquettes. This drinking style goes well with fried foods. Ah, an unstoppable collaboration!

This New Year's Day, I was completely cooped up and drank sake every day. Oh, I'm scared of the scale. LOL! This Kurashin is perfect for toasting. Like the refreshing label, it has the freshness of a crisp green apple when just opened. The oregano color is also seductive. The finish is dry, crisp and bitter, not too sweet. This time, I paired it with plum-flavored okaki as a light snack. I think I'm going to open a four-pack by myself...it's dangerous! But this label looks like the heartbeat you see on an anesthesia monitor during surgery...Doctor! I'm drinking too much, but my vitals are normal, right? LOL.

MIYASAKA is one of my favorite drinks, but I was attracted by the stylish black and silver label and the name "CORE", so I had a drink at IMADEYA's corner bar. It was made in June 2020, but it has a sweet and sour taste like a new sake, maybe because of this pasteurization method? This time, I married it with cheese and olives, but I think it would go well with fish and chips. I'll have to go back for more marriages! lol

Even though it's a Junmai Daiginjo, it's not that flashy, and it has the kind of mouthfeel and sharpness that makes you feel like you're getting right into the pocket. At New Year's Eve, drink at home. The price is reasonable though it is a sake that takes a lot of time and effort. The price is very reasonable. I really bow down to the brewers. I managed to get over the difficult year of 2020, and even though I still feel uneasy, I was able to welcome the New Year peacefully. I'm grateful to be able to enjoy such a wonderful sake. This is the first pressing, and it has a fruity, fresh taste that can only be drunk at this time of year. It has a good sense of gas and a refreshing aftertaste. This time, I paired it with my homemade tortilla (Spanish omelet). It also goes well with Western food, and the 4-pack was empty in no time. Oh, please give me another one!

At my favorite izakaya (Japanese pub), I get Horikoshi, which can only be drunk here. It has a sweet and sour mouthfeel with a firm aftertaste, but not too strong. It goes well with fermented foods and meat. It is a sake with a wide range of snacks that you will never get tired of drinking. This time, I paired it with the handmade salted squid that was recommended to me. Oh, it's an endless loop... lol

We spent Christmas in Kaga-Yamashiro hot spring, where we had Echizen crab and Echizen sake. It didn't feel like Christmas, though. LOL! This is a limited-edition, ice-cold matured sake from Sanbon. The font of the label is also nice. The mouthfeel is refreshing, with a hint of acidity and a touch of sweetness afterwards, and the taste is moist. The aroma is also gorgeous, and it is a gem worthy of the name "Tsuya". The rare crab meat is dipped in the well-scented and thickened miso inside the shell, and married with "Tsuya". Ah, paradise...even though it's Christmas. LOL!
