The balance of acidity and sweetness. It's fresh but full-bodied, with a core that's elegant and refined.
It seems to go well with any dishes, but this time it is a marriage with sashimi. Especially, it is excellent with sea urchin.
Oh, I can't stop my hand from holding the sake cup. lol
It is made from a rare rice called "Aizan". It is sold only once a year. On a certain site, it's sold for about 20,000 yen a bottle.
I'm so happy to be able to drink it at my favorite izakaya, which I haven't visited in a while.
