This is a gorgeous Okuharima sake that is only available at this time of the year. It has an aromatic flavor of Yamahai, and the 80% polished rice ratio allows you to enjoy the true flavor of the rice. In a little while, the nearby roadside station will be filled with "taranobuds" and other spring vegetables whose names I don't even know. Tempura of spring vegetables and the freshness of spring sake go well together. The mellow flavor of cold sake, wrapped in a firm umami and acidity, mellows out when heated, making it an excellent sake for evening drinks.

It is soft on the palate and can be enjoyed chilled or warmed. In response to the changes of the times, "Kubota Senju" has been pursuing further flavors over the past 35 years. The low-temperature, high-precision fermentation process has resulted in a clean taste with little clutter, and the koji has been brought out to its fullest extent to broaden the range of flavors. It is the perfect sake for everyday home drinking.
