The brewery has a long history, but I was attracted by the challenge of "growing up with olive-derived natural yeast," which is typical of Kagawa. The claim of "flavor reminiscent of muscat" notwithstanding (?), it has a perfect balance of sourness and sweetness. It has an exquisite balance of sourness and sweetness, and seems to go well with meat dishes.

With freshly squeezed new sake and an alcohol content of 19 degrees, there was no way it could be bad. It is not flashy by any means, but we recommend drinking it while slowly savoring the aroma and taste of the concentrated flavor of the rice. The sweetness of the sake will make the taste of Osechi stand out even more.

It was a commemoration of our trip to Kurobe, but the sake's fragrant aroma, the delicious taste of rice felt in the mouth, and its moderate thickening are indeed Toyama's sake. It was a good memory.

Junmai Daiginjo with 10-step brewing Ozeki Corporation Rice polishing ratio 40 Alcohol content: 16% to 17 Sake degree: -30 Acidity: 1.9 700㎖ (A gift ^^;) The brewer's sales pitch is that it has a "fruity and deep flavor, with an aroma that even exceeds that of a noble rotten wine" by using a 10-step brewing process instead of the usual 3 steps. As recommended, when drunk chilled, it is quite a sweet sake, and there is a big difference between likes and dislikes. It is an expensive sake, but its aroma and taste are not very peculiar, giving it a "great ordinary" image. If you taste it consciously, you can certainly taste some complex flavors, but it is still quite sweet, so it is not a drink that can be consumed in large quantities.

Kido Agarada Junmai Sake Heiwa Shuzo Co. Polishing ratio 80 Alcohol content 16 720㎖ 1,430 yen (tax included) Attracted by the "low milled rice 80%" label, I bought it to see what it tasted like. It has a slightly pale, light, golden yellow color and a subdued aroma...but it has a light sweetness without any cloying taste that is almost addictive and will keep you drinking as many cups as you want. It is the opposite of daiginjo, but it is definitely a "delicious sake" as well.

Rice polishing ratio 60 Alcohol content 16 720㎖ 1,490 yen (tax included) 〜My wife picked up some clay brushes in Shiga Prefecture, so I decided to make a sake from Shiga as well. First of all, the dark golden color and mellow aroma have a big impact, and the aged taste has the atmosphere of an old sake. It is the opposite of fruity ginjo-shu, which may appeal to different tastes, but it goes surprisingly well with food, and once you get used to it, you may find it addictive.

Alcohol content 18 degrees 720㎖ Yesterday, an acquaintance of mine sent me a bottle of Nanakanma Risshun Asa Shibori, and I immediately enjoyed it ❗️. I was very grateful to be able to drink the sake that was squeezed on February 4th the next day. It's a really good sake with a good balance of richness and sharpness, with an exciting newness that stands out in the mouth, but it's never sharp and easy to drink. Pacific Ocean Yamahai Brewing Special Junmai Sake Ozaki Shuzo Co. Rice polishing ratio 60%. Alcohol content 15 degrees 700㎖ 1,600 yen (+ tax) Purchased on a trip to Nachikatsuura. With "Yamahai" in the name, I imagined a rich taste, but it's more like a light sweet taste that's easy to drink. It's the perfect sake to go with thick tuna sashimi made with geta no tsuki.
