Today we will be drinking Oku-Shika, a 3 year old sake from Akushika 🥺. The aroma is of rice malt and a hint of lactic acid like yogurt... The color is brownish as it is an aged sake. When you drink it cold, you can feel the aroma of rice malt and the sweet and sour taste of lactic acid. The acidity is quite strong. The aroma of the rice malt is faint, and the acidity has softened a bit. Finally, hot...like rice malt? It smells like freshly cooked rice. It has a mild rice-like flavor with a hint of sourness. Personally, I found it best served hot. It has the aroma of Yamahai, mellowness, and a unique lactic acidity. It is quite delicious 🥺! It did not go well with the snacks I prepared today... Tonight we had the much talked about Tenbi! The aroma is gentle and subdued, like white grapes... The aroma is gentle and subdued, like white grapes... When you take a sip, you get a cider-like aroma, a gassy feeling, and a gentle sweetness. The bitterness is immediately noticeable. You feel the bitterness early on... which makes it refreshing to drink without getting bored! The Shinshu Kameari Junmai Ginjo Hitogochi that I drank before is even more refreshing... 🥺This is a delicious sake. I never get tired of drinking it! My long awaited Kamonishiki cargo tag sake! I heard it was the number one sake in Niigata, and I wanted to try it, but they don't sell it in Niigata... so I went to Nagano to buy some Niigata sake 🙄. The aroma is of elegant peaches... In the mouth, it has an elegant sweetness like wasanbon... combined with the aroma, it's like a peach compote 🥺 After that, a moderate sourness spreads and refreshes the aftertaste. It's a classy, beautiful, delicious sake! I've paired it with gratin and it goes great with that! Highly recommended! Thank you for the food! 3.8 out of 5.0 points

I've had my eye on this for a while tonight, Senkou Organic Naturals! The aroma is of lactic acid like Yakult and green apple... In the mouth, you can feel the sourness of white wine at first, and then the sweetness and alcohol like sake. The sweetness is very fresh and there is no unpleasant alcohol feeling! So to say, it's a good combination of white wine and sake...? The sourness is quite strong, but as the temperature rises, the sweetness becomes stronger. This sake may taste best at a temperature close to room temperature! This is delicious! It gets addictive as you drink it! Today, we used cured ham as a side dish, and it goes very well with it! I think western food like gratin goes better with this sake than Japanese food! This is so good! It's a taste that turns the stereotype of sake upside down! If I find it again, I'll buy it!
