The most basic of Mimuro cedar, sold year-round, and the most commonly seen. It is clean, non-habitual, and easy to drink. The aroma comes out as the temperature rises. My favorite ramen shop has started carrying this sake, so I always order it when I go there, but the price is 2022.04. I wonder if they don't sell too much?

Brands I didn't recognize, labels I didn't like, I wouldn't choose them myself. The clerk's recommendation mess was a jackpot. It was a heavier, more flavorful take on Shiraoi. It was good that we drank them in this order. Encountering unknown sake is the best part of drinking outside.

Hiroshima mix, using Hiroshima's sake rice, Senbon-Nishiki and Hachitan-Nishiki. This was not my favorite sake when I first started drinking sake, but these days I think I like it best. This sake has a solid, umami-guchi taste.

The specs are almost undisclosed. I don't come across Murayu very often, so if I see it, I'll drink it. The aroma is not too strong and it has a little sweetness, making it an easy to drink summer sake. It is an orthodox sake.

I don't usually compare the three types of sake, but this way of drinking makes me realize that Nabeshima has a surprisingly sour taste. It is delicious on a hot and humid day when it is cooled down to a crisp.

In fact, it may be the most famous sake in Aichi Prefecture. At about 100 yen per sake cup, it is very cost-effective. This may have been the first time I drank it with the intention of tasting it properly. Surprisingly, I thought it was not bad. The aroma, the flavor, the deliciousness of the rice... none of them are as good as the ones I usually drink. But it's only a quarter of the price!

This is the first fall harvest of the year. I thought it might be a little early in the season. However, it had the robustness of a hiyaoroshi sake. It was a delicious sake with a calm taste.

I heard that "Kotobukinmu" is the name of rice. I did not know that. The concept of Wakanami is "the pushing wave of flavor and the trailing wave of lingering taste. This sake is full of flavor.

When cold, it is slightly dry and hard. As the temperature rises, it becomes mellower. It is a sake that becomes delicious in the latter half of its life.

Study for warming sake. Myo no Hana, perhaps heated to 50 degrees Celsius or higher, and then enjoyed cooled. A good heated sake has a strong rice flavor behind the alcohol flavor, what I call a well-structured sake. I'm still not very good at heating sake, but I'm going to try to enjoy real heated sake little by little.

Netsujo @ Yamamori Shuzo. 30BY so it is 3-4 years old. Not only does it purely add thickness to the aroma, but it also adds a sense of being just barely old enough in a good way, and I thought this was an adult aged sake.
