At home. Nagano sake bought in bulk - ‼️ Purchased Nagano sake at Kyoto Takimoto today: ‼️ I tasted one of them, Kiyama, for the first time. The aroma is gorgeous and there is sweetness in the supernatant. It was my first time to try it and I had no prior knowledge of it, but I was attracted by the recommendation of the store owner and the delicious-looking label, so I took it home with me. The last sake I purchased on my GW Niigata trip. I opened Hishiko. As stated on the label, it had a mellow sweet sake quality that brought out the aroma of the yeast, the umami of the rice, and a beautiful sweetness. It has a clean aftertaste, making it an excellent choice as a mealtime sake. I would like to try it again on my wonderful trip to Niigata.

Honkin Normal Sake Yellow Label 1,800ml Alcohol added sake, koji rice 60%, kake rice 70%. This was purchased when we tasted it at the brewery last November. After six months had passed, the umami flavor seemed to have taken over. I think it was more smooth when it was first shipped. It was stored in a hallway with a refrigerator pan, so we will enjoy it before it gets too hot. I think I like it better when it returns to room temperature than when it is cold.

We opened a bottle at the office. This is the first time we have had "Shirasagi no Shiro", another name for Himeji Castle. At first I drank it at room temperature, and from the second glass I drank it on the rocks, and I could feel the gentle sweetness of the sake. The taste reminded me of Tengu Mai's Yamahai brewing. I'd like to try it warmed.

The location changed and we went to Hyogo Sake EXPO 2022, a local sake event in Hyogo, at Kobe Hankyu. I tasted a regular product, a draft version. I had tasted the hi-ire version before, so I wondered what the draft version was like. It was easier to drink than the hi-ire version, but not to my taste. I prefer the Shirasagi no Shiro (castle of the egret), which is made with Nojoho.
