@Japanese Sake BAR Sake Iki Shin Garyu We didn't go to the brewery because it was too far away, but Aizu Sake Brewery's Aizu is located in Minami Aizu Town. In Tokyo, you sometimes see Yamanoi. The aroma on the nose is fruity. In the mouth, it has a clean sweetness and umami that is typical of daiginjo-style sake. The taste is elegant and finishes smoothly. It was quite delicious 🍶✨️

Fruity
I bought it by weight the day after the Hankai Train Off-line Meeting. I took this opportunity to buy it because Miyakotsuru's draft sake is rarely distributed. This is an annex of a store in Fushimi that sells all of Fushimi's sake in Nihonbashi, Osaka. I wonder if the sake brewers' association is involved? The bottles come in various sizes and labels, and you buy the bottle you want and pour it. You pour the sake yourself, but since I was right on the 300 ml mark, I received a sake cup as a "Pitari" prize. The taste is melon-like with a clean mouthfeel. The long, thin and extended acidity is impressive. It is a little light and has a sweet and spicy flavor. After about a week, the flavor seems to have opened up, or rather, the flavor profile has become more defined.

It has a pleasant sweet bread fragrance. The taste is sweet but not over powering. It almost had a doughnut like quality to its taste. I’ve never had one like this but I enjoyed it.
Alcohol content: 15 Sake meter: +6 Acidity : 2.0 Rice Source : Yamadanishiki 20% (Koji rice) Rice Polishing Ratio:60 The taste is mild and reserved, but the aftertaste is sharp and bittersweet, which is good, good, good.

I've had Kanazawa-ya from the same brewery at an outing, but this is my first time drinking it. I had never heard of rice called "Takaneminori" before. It has a fresh aroma with a hint of cemedine. The impression is that it fades out after a pause from the refreshing feeling, followed by a gutsy sweet flavor. It is a new sake, but it has a strong umami.

Hyogo Prefecture Mizuho Kuromatsu Kenbishi Rice polishing ratio Alcohol 17.5 Junmai sake from Kenbishi. As a Junmai sake drinker, I really wanted to have a Junmai sake from Kenbishi, so I bought it online. The color is light amber. The matured flavor reminds me of chocolate aroma. It is a solid sake with a great posture.

It is Minokiku Hojo. It is a normal sake made from 100% Yamada Nishiki. It is a little sweet and has a fruity taste. The price is 1760 yen (tax included) and it is the best sake in Japan. It is said that this sake is designed to be the best sake that you can drink in the evening. That's right 😋.

The one I bought at the Kisegawa venue of the Shiga brewery opening event. It has a strong alcohol taste with a lot of gusto. It has a strong sweetness and umami of rice. It is better at room temperature, but it is also good on the rocks or with soda. After a week, it still has a strong alcoholic taste, but I think the sweetness has increased.

There is no mention of it, but it is probably nama sake. It is not labeled as Nama-shu, but according to the information on the Internet, the label on the back of the bottle says it needs to be kept chilled, which means it is Nama-shu. Am I right? The rice is Ginbukiyo and Nihonbare. It also looks like a raw sake. It does not feel as spicy as the sake level, and although it is spicy, there is a good balance of sweet and spicy. The taste is light and refreshing. The spiciness finishes with a lingering sweetness. There is a good amount of graininess.

Spring Tokaido Sake Brewery Tour (2) Dragon Boat Festival🎏 is Kabuto-chan. The second bottle is Suzukabuto. It is junmai ginjo new sake. It is safe to say that this one went out with a real mission. The rice is Ginbuki, a sake rice from Shiga Prefecture, just like the first bottle, Hatsuzakura. It is served cold. It has a slight yellow hue. The top aroma is very mild. It has a juicy aroma reminiscent of fresh bamboo grass, young dried grapes, and oranges. The mouthfeel is round. From the bluish alcoholiness, the juicy orange aroma and acidity are gently developed with a smooth and robust rice feel. The taste is sharp with a tangy, bitter and pungent flavor. The refreshing acidity typical of junmai ginjo-style sake, the familiar rice flavor, and the sharpness of the aftertaste are all nicely integrated. It is a moderate, not too hard-core food sake, and the more you drink, the more you will want another glass. And if you heat it up The contrast between the plumpness of the freshly cooked rice and the tangy bitterness is again delicious. I would like to try it with mackerel sushi as an entrée.

Clear and refreshing! (These are just the impressions of a sake beginner. (These are just my impressions as a sake beginner, please don't get me wrong. It's all right as long as you enjoy drinking it.) (The following is a reprint from the description on the Internet. It has a fresh aroma and a smooth smooth throat. It has a dry, light taste with excellent sharpness. It is recommended for first-time sake drinkers as it is easy to drink. Incidentally, the Sudoh family has been brewing sake since the end of the Heian Period (1141, the first year of the Eiji Period), and is the oldest brewery in Japan, now in its 55th generation. The brewery is located in Kasama City (formerly Tomobe Town) in the center of Ibaraki Prefecture.
