Echizenmisaki Junmai Genshu Prune
The name "Prune" means "plum" in French.
Like Ananas a little while ago, some might argue that they want to use a French word for sake...
I tasted and bought this sake when my hobby sake shop was holding a special event at Keihan Department Store.
I had it cold.
The color is clear with a light yellowish hue.
The nose has a sour, green plum and plum aroma.
The mouthfeel is minerally and flows smoothly.
After swallowing, the nose is filled with the aroma of fresh green plums.
From the mid-palate, the mild acidity is intermingled with a gentle sweetness, and the taste is moderately sweet and sour.
The taste is also tightened by the acidity, but it is also gentle.
The high acidity keeps the sake well-balanced and not too sweet or too sour, even with the high sake content.
Ingredients:Rice (domestic), rice malt (domestic)
Rice used: 100% Gohyakumangoku produced in Fukui Prefecture
Rice polishing ratio:70%.

Alcohol degree: 12
Acidity: 3.1
Yeast: Fukui plum yeast (technical cooperation by Fukui Prefectural University)

I've always been curious about this sake, but it looks like ●Koma-san won't let me in on specs, so I'll have to buy it from a hobbyist liquor store😅.
